The evaluation of the quality and safety of food raw materials and food products according to the analysis of the sanitary-chemical and microbiological parameters which were performed by the laboratory Center of Hygiene and Epidemiology in the Irkutsk region is presented. It has been established that the risk for the population may be associated with a high probability of disparity to hygienic requirements according to contents of arsenic, nitrates and microbiological agents.
