The article presents materials of scientific research of possibility of using biologically active substances as an alternative for antibiotics in production of pork. The aim of this work is to study the effect of drug for veterinary use, that contain the main functional component – NONON, in comparison with biologically active additives «Lactusil» and «Sporothermin» in feeding young pigs on their growth and development. The studies were carried out on the basis of Lenin PZK of Surovikinsky district of Volgograd Oblast from January to June 2019. For this, 4 groups of large white piglets were formed, 30 heads each at the age of 2 months. In this case, the control group received a general economic diet (GED), animals of the I group received GED in common with VD in an amount of 0.5 g (5 mg of active ingredient) per day per 1.0 kg of feed for 14 days; II groups - GED + dietary supplement «Sporothermin» in amount of 1.0 kg per ton of compound feed; Group III - GED + dietary supplement «Lactusil» - at a dose of 0.2 ml / kg of live weight. The use of probiotics in the diets in comparison with VD has shown their high efficiency on growth, development and meat productivity of gilts. It was found that animals of groups II and III in biochemical, immuno-biological indicators and meat productivity were superior to analogs from control group and I group (treated with VD).
The purpose of this work is to study a new phytobiotic with bifidogenic action as an alternative for veterinary drug at the early stage of ontogenesis and measuring its effect on physiological state and productivity of animals. 3 groups of large white piglets at the age of one day were formed selected for the experiment on the farm. A total of 90 similar piglets were selected. The animals were kept under standard conditions adopted in the farm. Piglets in the control group received farm standard diet (SD), analogs of experimental group I - SD + veterinary drug containing in its composition: «Sulfadimezin» (at a dosage of 25 mg / kg of live weight) and «Trimethoprim» (at a dosage of 5 mg / kg of live weight), II experimental group - OR + «Lactusil» (in the amount of 0.2 mg / kg of live weight). The use of the biologically active feed additive «Lactusil» in diet of the animals in comparison with a veterinary preparation containing in its composition: «Sulfadimezin» and «Trimethoprim» did not have a negative effect on the physiological state and level of humoral immunity. The high level of live weight, absolute and average daily gains is confirmed by the results of biochemical, morphological and immunological studies in blood of experimental piglets, which may indirectly indicate the level of metabolic processes in their bodies.
The article presents innovative technology development results of introduction of lactulose-containing probiotics for pig feeding. The purpose of the work is to study combined effect of biologically active additives «Lactumin» and «Lactusil» in comparison with drug for veterinary use (DP) in feeding young pigs on physiological state and productivity of animals. The scientific research was carried out on basis of farm-breeding plant named after Lenin of Surovikinsky District of Volgograd Region from January 2019 to June 2019. For this, 4 groups of large white piglets were formed. Each group consisted of 30 animals of two months old animals. Animals of the control group received a general economic diet (GED); analogues of experimental group I - GED + DP at a dosage of 6 mg per 1 kg of animal weight within 14 days; II experimental group - GED + a mixture of dietary supplements «Lactumin» and «Lactusil» at a dosage of 0.2 mg / kg of live weight each. In general, the use of biologically active additives «Lactumin» in common with «Lactusil» in diet of farm animals in comparison with DP did not have a negative effect on physiological state and level of humoral immunity. At the same time, the highest indicators of humoral immunity were found in animals of II experimental group, that received feed additive «Lactumin».
Currently, the use of food additives of plant origin is widely used in technologies of meat products, that allow not only to expand assortment, but also to increase biological value, improve the organoleptic characteristics of prepared food products. The purpose of this work was to develop a recipe for fried sausage products with original food additives. During the research, the main quality indicators of enriched fried sausages: organoleptic and physicochemical, were studied. The developed products have elastic consistency and spicy taste, that is characteristic for each sample with a brown color on the cut, as well as a pleasant aroma, that is specific to this type of product. Calculation of the production cost showed the feasibility of introducing the developed formulations into manufacturing process. The use of these sausages in diet will enrich it with micronutrients.
The article is devoted to development of functional meat products made from beef obtained from crossbred bulls by Red Steppe cow breed with Kazakh white-headed bulls. The main raw material in the design of the ham recipe was beef obtained from crossbred bulls ¾ blood of Kazakh white-headed breed. Its functional and technological parameters were follows: pH was 6.73; dry matter content - 29.55 5%; fat content - 9.20%; protein content - 19.45%; water-holding capacity - 0.47-0.48 kg of water per 1 kg of raw materials. The possibility of introducing a biologically active additive in the form of lactulose powder, as well as vitamins and minerals, is being considered. The developed products have pleasant taste and aroma, that is specific to this type of product, elastic consistency, characterized by high quality indicators. Cost price of ham samples for elderly nutrition - 420.0 and 420.8 rubles per 1 kg, that confirms feasibility of this development.
