Single bulb black garlic is a fermented product of single-bulb garlic for 30 days with a certain temperature and humidity. It experiences a Maillard reaction and has an increased content of active compounds. Single bulb black garlic contains secondary metabolites in the form of flavonoids, tannins, and saponins which have the potential as antioxidants so that they can inhibit free radicals and can be used as a substitute for synthetic antioxidants. Single bulb black garlic is formulated as an antioxidant lotion to facilitate its use. The objective of this study is to determine the optimal antioxidant activity in a lotion preparation containing single bulb black garlic on DPPH, to find out the concentration of single bulb black garlic which is effective as an antioxidant in a lotion preparation and to find out the best physical properties as a lotion preparation. This type of research is experimental research. Single bulb black garlic is formulated in four lotion formulas with concentrations of FI (0%), FII (1%), FIII (5%), and FIV (10%). Then, the antioxidant activity was tested on DPPH and IC50 values were calculated on the formula of 250.59 ppm, 118.77 ppm, 96 ppm, and 70.17 ppm, and physical evaluation was tested to discover results that met the physical requirements of lotion preparations (adhesion, organoleptic, homogeneity, lotion type, spread ability, viscosity, and pH). Statistical test results showed a significant difference in each group on antioxidant activity (p<0.05). The conclusion of this study found that a single bulb black garlic concentration of 10% had optimal antioxidant effectivity; the four formulas produced showed optimal antioxidant activity and the FII formula showed the best physical properties of the lotion.
Black garlic tunggal (BG) adalah produk fermentasi bawang putih tunggal pada suhu, dan kelembaban terkontrol selama 29 hari, sehingga mengalami reaksi Maillard. Penelitian terkait efektivitas antihiperurisemia BG belum pernah dilakukan. Penelitian ini bertujuan untuk mengetahui efektivitas antihiperurisemia dari ekstrak metanol 80% BG. Metodologi penelitian bersifat eksperimental berupa studi in vivo, hewan uji yang digunakan yaitu tikus putih jantan galur Sprague Dawley, dibagi menjadi 6 kelompok, kontrol normal, kontrol negatif, kontrol positif (Allopurinol 27 mg/kg BB tikus), kelompok perlakuan ekstrak metanol 80% BG dosis 62,5 mg/kg BB, 125 mg/kg BB, dan 187,5 mg/kg BB tikus. Sampel uji dan kontrol diberikan secara peroral selama 7 hari berturut-turut, lalu hari ke-8 diinduksi kalium oksonat secara intraperitonial dan pengambilan darah melalui sinus orbital, kemudian dilakukan pengujian dan dianalisis dengan oneway ANOVA. Hasil penelitian menunjukkan kelompok kontrol positif dan perlakuan I, II, III ekstrak metanol 80% black garlic tunggal mempunyai rata-rata sebesar 2,63; 3,99; 3,60 dan 2,75 mg/dl. Hasil Post Hoc LSD menunjukkan kelompok kontrol positif tidak memiliki perbedaan bermakna dengan kontrol normal dan ekstrak metanol 80% BG dosis 187,5 mg/kg BB tikus. Kesimpulan penelitian ini adalah studi in vivo ekstrak metanol 80% BG hari ke-29 mempunyai efektivitas sebagai antihiperurisemia pada tikus galur Sprague dawley. Indonesia has various types of tubers offered to be developed, one of which is porang tuber (Amorphophallus muelleri Blume). Amorphophallus muelleri Blume has macronutrient content. Macronutrients consist of carbohydrates, starches, fiber, glucomannan, protein, and lipid. Porang tubers have higher glucomannan content applied in the food sector including emulsifiers and stabilizers based on the application in the pharmaceutical field. This research is a research on the exploitation by fermentation using Lactobacillus bulgaricus bacteria. Porang tuber fermentation (Amorphophallus muelleri Blume) with Lactobacillus bulgaricus bacteria contains carbohydrates, starch, fiber, glucomannan, protein, and lipid. Macronutrient levels were tested in accordance with SNI (National Standard of Indonesia) 1992. The results of the research on macronutrient content before fermentation and after fermentation for 8 hours, 10 hours and 12 hours for carbohydrates were mean ±SD 3.80; starch mean ±SD 2.83; fiber mean ±SD 2.07 ; glucomannan mean ±SD 12.77; protein mean ±SD 2.41; and Lipid mean ±SD 1.89.
Kaca piring adalah perdu tahunan dari suku kopi-kopian atau Rubiaceae. Daun kaca piring memiliki potensi sebagai inhibitor enzim xanthine oxidase karena adanya beberapa golongan senyawa seperti flavonoid, polifenol dan terpenoid. Penelitian ini bertujuan untuk mengetahui kandungan metabolit sekunder yang berpotensi sebagai inhibitor, ekstrak daun kaca piring memiliki aktivitas sebagai inhibitor dan konsentrasi ekstrak dengan nilai hambat paling baik. Penelitian ini merupakan penelitian eksperimental dengan 5 perlakuan konsentrasi dan 2 ulangan. Perlakuan konsentrasi ekstrak daun kaca piring (Gardenia jasminoides J. Ellis) yaitu 0,1;0,25;0,5;1;5 µg/mL allopurinol sebagai pembanding dengan perlakuan konsentrasi 0,1;0,2;0,5;1;2 µg/mL. Prinsip pengukuran adalah nilai absorbansi pada spektrofotometer yang mengukur jumlah asam urat yang terbentuk sehingga diperoleh persentase hambatannya. Hasil penelitian menunjukkan daya hambat ekstrak dengan konsentrasi 0,1 sebesar 2,9%; 0,2 sebesar 5,09%; 0,5 sebesar 8,24%; 1 sebesar 11,04%; 5 sebesar 49,64%. Berdasarkan hasil penelitian bahwa daya hambat optimum oleh ekstrak daun kaca piring (Gardenia jasminoides J. Ellis) pada konsentrasi 5µg/mL yang memiliki persentase penghambatan paling besar yaitu 49,64% dengan nilai keseluruhan IC50 sebesar 5,04 µg/mL kategori penghambatan sangat kuat.Kata Kunci: Daun kaca piring (Gardenia jasminoides J.
