Abstract
The study was carried out to assess the chemical composition of raw camel’s milk produced in Khartoum State, Sudan in summer and winter seasons.
30 samples of the raw camel’s milk were taken from five different areas ( El _ Sarha , El_ Hatana , Soog Libya , Om Dawn Ban and Shambat ) . 15 samples were taken in May , 2017 and 15 samples in February , 2018 . The results obtained in two seasons ( summer and winter ) ,respectively as the following :-
The results of chemical composition which obtained in summer were pH (5.6 – 6.6) ,density (18 – 29) , fat content (2.3 – 3.5%) , protein content (6.1 – 8.4%) , ash content (0.4 – 0.9%) , lactose content (2.5 – 3.5%) , and total solids ( 10 . 1 – 14.3% ) ,whereas the values of the chemical composition that obtained were (4.6 – 6.6 ) , (15-29) , (4.5 – 5.0 %) , (2.5 – 3.5%) , (0.7 – 0.8 %) , (4.4 – 5.7%) and (8.2 – 15 .2%) for the above mentioned parameters , respectively.
