Autor a quien debe ser dirigida la correspondencia ResumenEn el presente trabajo se utiliza la metodología de superficies de respuesta para evaluar el efecto de la temperatura, la presión, el número de pulsos de vacío y la relación jarabe/fruta, sobre los parámetros de color como la luminosidad, las coordenadas cromáticas y las diferencia de color (L*, a*, b* y dE*), la humedad, el contenido de sólidos solubles, la textura (dureza), la acidez y la actividad acuosa, en la deshidratación osmótica de aguacate (Persea americana) var. Hass. Se usa una solución de maltodextrina (50 %), NaCl (10 %), ácido cítrico (1,5 %) y ácido ascórbico (1,5 %), durante 4 h. Los resultados mostraron que es posible reducir el deterioro del color y mejorar las demás características del aguacate (Persea americana var. Hass) con deshidratación osmótica a 7,5°C y 850 mBar. Bajo estas condiciones se modeló el comportamiento cinético en deshidratación osmótica del aguacate utilizando dos modelos empíricos y uno fenomenológico. Hass. A solution of maltodextrin (50%), NaCl (10%), citric acid (1.5%) and ascorbic acid (1.5%), during 4 h was employed. The results show that it is possible to reduce color damage and to improve others characteristic of avocado with osmotic dehydration to 7.5 °C and 850 mBar. Under these conditions the kinetic behavior in osmotic dehydration of avocado was determined, using two empirical equations and a phenomenological model.
