Abstrak VCO mengandung berbagai jenis asam lemak yang juga merupakan bagian terbesar dari komposisi kandungan kimia pada semua jenis lemak dan minyak. Selain asam lemak yang merupakan komponen mayor, juga mengandung komponen minor berupa senyawa senyawa fenolik. Guna mendapatkan komposisi minor yang optimal, diduga dapat dipengaruhi salah satunya oleh umur panen kelapa yang digunakan. Untuk itu telah dilakukan penelitian pengaruh umur buah kelapa terhadap rendemen minyak VCO, dimana umur buah ditentukan melalui pendekatan tampilan visual kelapa tua, yaitu belum membentuk haustorium (T) dan sudah membentuk haustorium (ST). Penelitian ditujukan untuk mengetahui perbedaan rendemen minyak yang dihasilkan melalui proses pemancingan, adapun penelitian menggunakan metode eksperimental dengan 1 perlakuan, yaitu umur buah. Hasil penelitian menunjukkan bahwa secara fisik endosperm (T) cenderung lebih tebal 2,7% dibandingkan endosperm (ST), akan tetapi persentase kanil cenderung lebih sedikit 3% pada satuan bobot yang sama. Hasil pemancingan minyak VCO menunjukan rendemen minyak yang dihasilkan dari kelapa T (haustorium belum terbentuk) 3,33% lebih tinggi dibandingkan dari kelapa ST (haustorium sudah terbentuk). Untuk itu untuk mendapatkan minyak VCO metode pemancingan, sebaiknya menggunakan bahan baku kelapa tua yang belum membentuk haustorium yang secara fisik ditandai dengan buah yang telah mengering dan belum tumbuh tunas. Kata kunci : rendemen VCO; umur buah Abstract VCO contains various types of fatty acids which are also the largest part of the chemical composition of all types of fats and oils. Beside fatty acids which are major components, they also contain minor components in form of phenolic. In order to get the optimal minor components, can be influenced by the age of the coconut is used. For this reason, research has been carried out on the effect of coconut fruit age on VCO oil yield, where age of the fruit is determined through the visual appearance approach of old coconut, which has not yet formed a haustorium (T) and has formed a haustorium (ST). Research was aimed to know the difference in yield of oil produced through fishing process, and it used experimental methods with 1 (one) treatment, the age of fruit. The results showed that physically endosperm (T) 2.7% thicker than endosperm (ST), but the percentage of coconut cream less than 3% from same weight endosperm. The results of VCO oil fishing show that the yield of oil produced from T coconut (haustorium has not been formed) is 3.33% higher than from ST coconut (haustorium has not been formed). For this reason, to get VCO oil with fishing method, should use old coconut raw materials that have not formed a haustorium which is physically marked by dried fruit and no buds have grown.
