Consumer interest in traditional food products (TFPs) has increased in recent decades. The concept of TFPs is made up of seven dimensions. However, it is not yet clear what the contributions of these dimensions are to the perception of the traditional image of a specific product. In addition, the effects of constructs such as habit, product involvement and objective and subjective knowledge on the traditional character of a product have not been explored either. The aims of this work were to evaluate the influence of the dimensions of the traditional food concept on the perception of mezcal and tequila and to understand consumer’s perception of the traditional character of the beverages through their segmentation characteristics. Eight hundred consumers were surveyed in four Mexican cities. A questionnaire was designed to assess the constructs, TFPs’ dimensions, sociodemographic information and consumption patterns. Results showed that the dimensions of the traditional concept allowed a better understanding of the traditional character of the product, as well as their individual relevance showing that frequent consumption is not always linked to the traditional character of a product. Three clusters were obtained for both products based on the assessed dimensions of the traditional concept. The presence of the segments showed variations in the contribution of the different dimensions to the concept of “traditional”. Geographic location, special dates and sensory dimensions are determinant in the traditional perception of both beverages, which is useful to design effective strategies to promote rational and responsible consumption.

Se realizó un análisis cualitativo a partir de información de 14 redes y clústeres europeos relacionados con el desarrollo rural y el sector agroalimentario, asimismo se recurrió a publicaciones, informes y páginas web de las redes. Hallazgos. Se identifican acciones colaborativas entre las redes agroalimentarias europeas y la sociedad, principalmente del sector primario mediante eventos, reuniones, jornadas, charlas, encuentros con los distintos actores de la red y otras redes.Originalidad. Las organizaciones rurales europeas presentan trabajo colaborativo basado en la transdisciplinariedad y la innovación sostenible. Conclusiones y limitaciones. Las políticas públicas para la transferencia del conocimiento y tecnológica en el campo mexicano deben convertirse de una innovación lineal hacia la promoción del modelo de innovación interactivo o en red.
The little development and disruption of in agri-food supply chains are important factors that prevent the growth of small Mexican producers, being the link with the lowest income of the entire chain and in which there are the greatest injustices. The objective of this research work is to map and identify the links the supply chain of the mango barranqueño; and benchmarked with the Tommy Atkins chain. The methodology used consisted of three steps: 1) Data analysis of the Barranco mango, 2) Mapping the supply chain of the mango barranqueño and Tommy Atkins and, as well as their relationships, and 3) Compare of supply chains to analyze the links that could be developed and improve in the supply chain of the mango barranqueño. The contribution of this work is the first approach for the analysis and improvement of the supply chain management of small producers of the barranqueño mango, in order to strengthen short sustainable supply chains.
Purpose. Mexico is a country with a richness in biodiversity and a high level of Natural Capital throughout the territory; however, the highest concentration is distributed in regions where a population with high levels of marginalization and socioeconomic poverty lives. Methodology. The characteristics of genetic resources and their sustainable use in conservation require the establishment of cross-cutting strategies in the design and implementation of comprehensive public policies focused on society and the diversity of territories and social needs. Findings and originality. This reality highlights the relevance of identifying the main elements that characterize the Natural Capital in the environments, mainly in the South Pacific region due to its social and cultural importance. The originality of this document is the analysis of the socioeconomic and marginalization conditions of the population with the most incredible wealth in biodiversity and establish strategies that facilitate the conservation of genetic resources in tune with sustainable social and economic growth in the medium and long term.
