Objetivou-se analisar a viabilidade econômica da substituição do feno de Cynodon spp por feno de resíduos da bananicultura na dieta de cordeiros. Foram utilizados 25 cordeiros Santa Inês, com idade média de cinco meses e peso médio inicial de 26,5kg, distribuídos em delineamento inteiramente casualizado, com cinco tratamentos (40% de feno Cynodon spp. + 60% concentrado, 20% de feno de folha de bananeira e 20% de feno de Cynodon spp. + 60% concentrado, 40% de feno de folha de bananeira + 60% concentrado, 20% de feno de pseudocaule de bananeira e 20% de feno de Cynodon spp. + 60% concentrado, 40% de feno de pseudocaule de bananeira + 60% concentrado), em cinco repetições. Após 69 dias de experimentação os animais foram abatidos. De posse do custo de cada dieta e do consumo dos animais, foi calculada a viabilidade econômica. O tratamento com 40% de feno de folha da bananeira + 60% concentrado apresentou os melhores indicadores econômicos, baseados na maior receita líquida, na maior taxa de retorno e na maior lucratividade para comercialização dos animais vivos ou abatidos. A inclusão de resíduos da bananicultura na dieta de cordeiros em crescimento aumenta a viabilidade econômica da atividade.
The aim of this study was to evaluate the effect of substitution of Cynodon hay with banana plantation residue hay on the carcass characteristics and tissue composition of commercial cuts of feedlot Santa Inês lambs. Twenty-five whole lambs were used, with an average age of five months and an initial live weight of 26.95 kg (± 1.5), distributed in a completely randomized design with five treatments (1 = 40% Cynodon spp. hay + 60% concentrate; 2 = 20% banana leaf hay + 20% Cynodon spp. hay + 60% concentrate; 3 = 40% banana leaf hay + 60% concentrate; 4 = 20% banana pseudostem hay + 20% Cynodon spp. hay + 60% concentrate; 5 = 40% banana pseudostem hay + 60% concentrate) and five repetitions. The lambs were slaughtered on day 69 of the experiment. The variables evaluated were: live weight without fasting (LWWF), live weight post-fasting (LWPF), morphometric measurements in vivo and postmortem, hot and cold carcass weights (HCW, CCW), hot and cold carcass yield (HCY, CCY), biological performance and weight loss by chilling. The carcasses were divided into eight commercial cuts: neck, shoulder, foreshank and hindshank, breast and flank, loin, leg and rack. The leg, shoulder and loin were dissected into muscle, fat and bone. The animals fed on pseudostem hay showed higher LWWF, LWPF, body length, HCW and CCW; however, the HCY, CCY, morphometric measurements and commercial cut weights and yields were not altered by the treatments. As carcaças foram divididas em oito cortes comerciais, sendo o pernil, paleta e lombos dissecados em músculo, gordura e osso. Os animais alimentados com feno de pseudocaule apresentaram maior PVSJ, PVCJ, comprimento corporal, PCQ, PCF, entretanto, o RCQ, RCF, medidas morfométricas da carcaça, pesos e rendimentos dos cortes comerciais não foram alterados pelos tratamentos. O uso do feno de pseudocaule permite a obtenção de carcaças mais pesadas, entretanto, os coprodutos alteram as características e rendimento da carcaça e dos cortes comerciais avaliados.

O delineamento experimental utilizado foi o inteiramente casualizado sendo os dados submetidos à análise de variância e regressão. A inclusão de fígado nas kaftas elevou linearmente os valores de pH (P=0,001) e força de cisalhamento (P=0,028), diminuiu a luminosidade (P=0,005) e os valores de oxidação lipídica no momento (P=0,001) e 24 horas (P=0,004) após a confecção dos produtos. Nas linguiças, a inclusão de fígado causou efeito linear crescente para a força de cisalhamento (P=0,030). As inclusões de fígado causaram efeitos lineares decrescentes nas notas relacionadas à variável sabor dos produtos kafta e linguiça (P=0,001 e 0,033, respectivamente), e efeito quadrático na aceitação global (P=0,008) das linguiças. Apesar da inclusão de fígado alterar alguns atributos relevantes de qualidade das kaftas e linguiças ovinas, as características físico-químicas e sensoriais não foram comprometidas.Palavras-chaves: kafta, linguiça, não componentes da carcaça, produtos cárneos. INCLUSION OF LIVER IN MEAT PRODUCTS FROM SHEEPABSTRACT: The objective of this study was to evaluate the physicochemical (pH, color, water retention capacity, cooking losses, shear force, iron content, and lipid oxidation) and sensory characteristics of koftas and sausages prepared from lamb meat and enriched with sheep liver. Meat from eight lambs weaned at 60 days and slaughtered at a body weight of 32.0 ± 0.2 kg was used. Percentages of 10 and 20% sheep liver were included in koftas and of 15 and 30% in sausages. A completely randomized experimental design was used and the data were submitted to analysis of variance and regression. The inclusion of liver in koftas linearly increased pH (P=0.001) and shear force (P=0.028), and reduced luminosity (P=0.005) and lipid oxidation at the time of (P=0.001) and 24 hours after (P=0.004) fabrication of the products. In sausages, the inclusion of liver linearly increased shear force (P=0.03). The inclusion of liver exerted decreasing linear effects on the scores related to the flavor of kofta and sausage products (P=0.001 and 0.033, respectively) and a quadratic effect (P=0.008) on the overall acceptance of sausages. Although the inclusion of liver altered some relevant quality-related attributes of sheep koftas and sausages, the physicochemical and sensory characteristics were not compromised.
Abstract. The objective of this study was to evaluate the intake, digestibility, nitrogen balance, and performance of feedlot lambs fed diets containing crude glycerin. A total of 30 Ile de France lambs were confined to individual pens at an average age of 45 d: 15.1 kg initial body weight and 32.2 kg final body weight. The animals were distributed in a completely randomized design and fed three diets containing fresh sugarcane as forage (50 %) and concentrate (50 %), with or without the inclusion of 100 and 200 g vegetable crude glycerin per kilogram dry matter (DM) replacing corn. Dietary glycerin inclusion reduced the intake of ether extract (P<0.001) and total carbohydrates (P=0.048) as well as the apparent digestibility of ether extract (P<0.001), but it had no effect on the intake and digestibility of the other nutrients nor on lamb performance. The apparent nitrogen balance of lambs on the three diets was positive. Although it does not affect the intake and digestibility of most nutrients, the inclusion of 100 and 200 g kg−1 DM of crude glycerin in the diet tends to worsen lamb performance, indicating that the ideal level of inclusion should be below 100 g kg−1 DM of crude glycerin.
