The demand for high pressure processing in the world has been increasing because it provides a practical and effective solution against food degradation. In addition, this technology can decrease populations of microorganisms harmful to people's health due to contaminated products. Therefore, high pressures represent a cutting-edge technology for food treatment that can be used anywhere in the world. Although this technology is industrial, there are companies like Zhao (China) that sell equipment from 5 liters that can be used for laboratories. This equipment has a FOB price of approximately 110 thousand dollars more. Peru, as a developing country, does not yet have all the tools needed to obtain mass consumer mass consumer products with high standards of health. Annually some of our food products are observed by the FDA [1] which leads to the loss of credibility in the international market. The issue of health care affects not only the international market, but also the domestic market, as in 2016, Law No. 30021 restricts the use of sugar, sodium, trans fats and saturated fats was passed [2], making the problem of health, a matter of national and international markets. Correct determination of the demand for high pressure processing allows the appropriate equipment to be allocated at strategic points that allow small entrepreneurs to have the technology through a maquila service without incurring high fixed costs. In this way, it ensures that it meets most of the demand and the brand of Peruvian products reaches position in national and international markets. Some of the variables to consider for the positioning of a maquila service will be quantities exported by products and the location of exporting companies.
