The traditional Cornelian cherry marmalade, named as 'Garagurt' , is usually consumed for nutritional purposes and health benefits. The objective of this study was to determine the antimicrobial and antioxidant activities of Cornelian cherry marmalade. Antioxidant activities of the sample as determined by ABTS, cupric ion-reducing antioxidant capacity (CUPRAC) and 1,1-diphenyl-2-picryl-hydrazyl (DPPH) assays were 8,428 ± 1,206 mg TE/100 g, 1,599 ± 41.4 mg TE/100 g and 773 ± 206 mg TE/100 g respectively. The antimicrobial activity of the sample was determined by the disc diffusion method in minimum inhibitory concentration (MIC) against Listeria monocytogenes, Bacillus cereus, Staphylococcus aureus, Escherichia coli, Escherichia coli O157:H7, Salmonella typhimurium, Pseudomonas fluorescens and Yersinia enterocolitica. The MIC value of garagurt (0.66 mg phenol compound/g) was ≥256 mg/mL for L. monocytogenes, S. aureus, Y. enterocolitica, E. coli and P. fluorescens when gentamicin (10 µg) was used as positive control. Total phenolic content (TPC), which provides antimicrobial and antioxidant activities, was determined as 195 ± 6.35 mg GAE/100 g in aqueous methanolic extract of garagurt. This product in different forms could be used for its antimicrobial effect to increase the shelf life of different foods.
Drying is a commonly used technology that provides a long post-harvest storage time for produce such as sweet potatoes. Convective drying (CD) is a method that, when conditions are optimized, provides produce with a better appearance and improved textural properties. In this study, changes in water activity (aw), moisture content (MC), rehydration capacity (Rc), shrinkage (Sb) and color attributes were modelled for the optimization of drying factors (temperature, thickness and time) using response surface methodology (RSM). The total phenol content (TPC), total flavonoid content (TFC), total anthocyanin content (TAC) and antioxidant activity of CD samples (63.79 °C, 4.78 h, 3 mm) were investigated as functional aspects and compared with results for FD samples (−45 °C, one term). Optimum convective drying conditions caused an increase in general antioxidant properties, such as total phenol (TPC), total anthocyanin (TAC), DPPH and CUPRAC. The TPC was 190.94 mgGAE/100 g, the DPPH scavenging activity was 12.05%, the TAC was 11.37 mg/100 g, and the CUPRAC was 0.469 mmolTR/g in convectively dried samples under optimum conditions. Although improved appearance and textural properties are obtained by freeze drying, it is possible to produce sweet potatoes with good appearance and functional properties by optimizing the variables of the convective drying process.
The most basic step in table olive production is de-bittering. Olives contain bitter flavor compounds such as oleuropein, and their presence precludes the consumption of fresh fruits. Oleuropein can be removed by natural methods (e.g., using tap water) or by applying various chemicals (e.g., lye). Chemicals affect the organoleptic and nutritional qualities of the olive fruit. The aim of this study was to improve the quality of naturally fermented ‘Domat’ cultivar green table olives using different de-bittering methods (by scratching, using 1% lye and using tap water). The lye pre-treatment negatively affected the nutritional, organoleptic and color qualities of the olives. In all of applications, the best color stability was obtained in the olives that were de-bittered using the scratching method.
Is virginity the glorified signifier of proper and disciplined female subjectivity or is it the site of resistance and sabotage of the hegemonic gender norms? Focusing on hymen reconstruction operations (hymenoplasty) in Turkey and conceptualising them as medico-political assemblages, this chapter explores how virginity is understood and constructed in Turkey and the kinds of female subjectivity configured through these operations. Framing hymen reconstruction cases and virginity within the problematic of necropolitics helps us understand how the enemies to be expunged from the unfolding gendered regime and ideology in Turkey are defined and how the boundaries of a realm where an authorized female subject – the virgin – can dwell are reconstructed. The chapter focuses on the metaphorical death of the (female) subject as a result of the appropriation of its most defining features, such as autonomy on her own body, which renders her a threatening subject when she is not ‘the virgin.’ Thinking about hymen reconstruction as an example of necropolitical performance, this chapter analyses the possible meanings of the death of virginity within the medico-political assemblages of Turkey.
