This text analyses the regulation and certification process of Chilean salmon farming based on the discourse of its actors. First we will show how new governance structures in the neoliberal context are a result of negotiation processes between diverse actors. Secondly, we will argue how said governance manages to articulate environmental rationalities and interests of a variety of actors from industry and civil society, however at the cost of minimizing socio-labor issues and suppressing the question of who has access to the use of nature. This implies privatizing common marine resources and contributes towards excluding several organized actors.
El borde costero del sur de Chile vincula grupos domésticos con su entorno mar-tierra, generando relaciones socioeconómicas de complementariedad que promueven y producen culturas alimentarias de bordemar. Bajo el enfoque de los Sistemas Agroalimentarios Localizados (SIAL), utilizamos una metodología cualitativa, de corte etnográfica, enfocada en las organizaciones económico-alimentarias de Huape, Región de Los Ríos. El trabajo permite evidenciar la presencia de un Sistema Agromarino Alimentario Localizado, el cual coexiste con propuestas de especialización pesquero-artesanal. Este sistema se configura desde la cultura bordecostera y se expresa en el desarrollo y reinvención de la gastronomía local. No obstante, la propuesta no está exenta de controversias y contrapuntos devenidos del contexto territorial en el cual se despliega.
