ABSTRAK Zat yang dinilai dapat memberi banyak manfaat dalam tubuh yaitu zat antioksidan. Antioksidan berdasarkan sumbernya dibagi menjadi dua yaitu antioksidan sintetik dan antioksidan alami. Salah satu zat yang berpotensi sebagai antioksidan alami, yaitu antosianin mempunyai manfaat pada tubuh dalam berbagai penyakit degenerative (anti-hipertensi, penyakit jantung coroner, mencegah adanya gangguan fungsi hati, kanker). Upaya untuk mencegah terjadinya penyakit yaitu dengan memanfaatkan bunga telang sebagai obat tradisional. Penggunaan bunga telang saat ini masih terbatas sehingga perlu adanya pengolahan modifikasi bunga telang guna memperoleh zat gizi yang seimbang, yaitu dengan menjadikan bunga telang sebagai bahan dasar pembuatan sirup yang dikombinasi dengan bahan rempah. Sediaan sirup tersebut selain memberikan warna yang menarik juga rasa, aroma, dan khasiat yang baik pula juga dapat menjaga imunitas tubuh. Pemberdayaan kader PKK dengan jumlah 23 orang di Kelurahan Kauman Kota Malang dalam pemanfaatan pembuatan sirup kombinasi bunga telang dan rempah sebagai minuman di masa New normal melalui pemberian edukasi dan pelatihan pembuatan sediaan secara tatap muka sehingga imunitas kesehatan dapat terjaga. Metode pelaksanaan yang digunakan dalam pengabdian masyarakat kepada kader PKK meliputi 3 kegiatan antara lain: Tahap persiapan: melakukan pendekatan, persiapan bahan dan alat yang digunakan untuk pembuatan sediaan minuman kombinasi tersebut; Tahap pelaksanaan: memberikan edukasi kesehatan dan evaluasi persepsi terkait manfaat, cara penyajian, cara pembuatan; Tahap evaluasi dilakukan dengan menggunakan kuesioner Pre-Post Test terhadap tingkat pengetahuan terkait manfaat dan khasiat dari 71,74% menjadi 92,75% dan terhadap peningkatan keterampilannya rata-rata awal 78,98% dan rata-rata setelah dilakukan pelatihan adalah 92,03%. Kesimpulan untuk peningkatan tingkat pengetahuan terkait manfaat dan khasiat minuman kombinasi bunga telang dan rempah sebesar 29,28% dan evaluasi persepsi keterampilannya kepada para kader PKK sebesar 16,52%, sehingga dapat dikatakan telah tercapai. Antioxidants based on their sources are divided into two, namely synthetic antioxidants and natural antioxidants. One substance that has the potential as a natural antioxidant, namely anthocyanin, has benefits for the body in various degenerative diseases (anti-hypertension, coronary heart disease, preventing impaired liver function, cancer). Efforts to prevent the occurrence of disease is by utilizing the butterfly pea flower as a traditional medicine. The use of butterfly pea flowers is currently still limited, so it is necessary to modify the butterfly pea flower in order to obtain a balanced nutrition, namely by making the butterfly pea flower the basic ingredient for making syrup combined with spices. Apart from providing an attractive color, this syrup preparation also has good taste, aroma, and benefits, it can also maintain the body's immunity. Empowerment of PKK cadres with a total of 23 people in Kauman Sub-District, Malang City in the use of making syrup of a combination of butterfly pea flowers and spices as a drink in the New normal period through providing education and training in making preparations face to face so that health immunity can be maintained. The implementation method used in community service to PKK cadres includes 3 activities, including: Preparatory stage: making an approach, preparing materials and tools used to make the combined beverage preparation; Implementation stage: providing health education and evaluation of perceptions related to benefits, ways of serving, ways of making; The evaluation stage was carried out using the Pre-Post Test questionnaire on the level of knowledge related to the benefits and efficacy from 71.74% to 92.75% and on the increase in skills the initial average was 78.98% and the average after training was 92.03 %. The conclusion for increasing the level of knowledge related to the benefits and efficacy of a combination of butterfly pea flowers and spices is 29.28% and evaluating the perception of skills for PKK cadres is 16.52%, so it can be said that it has been achieved.
