The use of the dielectric constants of various polymers and flavour compounds was investigated t o develop a practical relationship for the prediction of 'flavour scalping'. A plot of equilibrium sorption vs. the dielectric constant (DEC) showed little correlation. However, the correlation improved significantly when a plot of equilibrium sorption vs. DEC was made for each individual polymer. Insignificant R2 values for polar and nonpolar polymers indicate that the DEC may not encompass all of the factors for an accurate prediction of sorption by flavour compounds.
