Raspberry is a crop, characterized by a valuable chemical composition, which determines the wide spectrum of its utilization not only as a fresh fruit, but also as a plant raw material for the food industry. The purpose of the paper is to make an integrated assessment for the fruit of promising raspberry varieties from genetic pool of FSSI “I.V. Michurin FSC” for nutrient and biologically active substances content and mineral elements. The object of investigation was 18 raspberry fruit varieties. The varieties are promising for cultivation in the Central Black Soil region of Russia. Chemical analyses of fruit were carried out with the use of spectrophotometric, chromatographic (HPLC), atomic absorption methods. As it was found, the significant variation in chemical composition indicators turned to be dependent on varietal features. The raspberry fruit accumulated 2.9–3.9% of dietary fibre, 0.34–1.3% of protein, 13.6–31.1 mg/100g of vitamin C, 0.2–83.6 mg/100g of anthocyanins, 0.14–0.90 mg/100g of niacin, 0.1–0.9 mg/100g of resveratrol, 0.2–3.1 mg/100g of piceid, 118.8–388.0 mg/100g of potassium, 0.29–0.97 mg/100g of iron. A high level accumulation of ascorbic acid was found in Gerakl, Evrazia, Zhar-ptitsa, Peresvet varieties; anthocyanins–in Evrazia, Gerakl, Polka, Rubinovoe ozherel’e; resveratrol and piceid–in “Zhelty gigant” and “Rubinovoe ozherel’e” varieties. The studied varieties are recommended as edible fresh fruit and for the consumption in the frozen form. Preventive food production is also appropriate.
Background. Blue honeysuckle (Lonicera caerulea L.) is a valuable source of bioactive compounds (BAC) of polyphenolic nature and rare for horticultural berries iridoids, which have antioxidant, anti-inflammatory, antimicrobial and other properties and are widely used in the food, medical and cosmetic industries.Materials and methods. The berries of 20 released honeysuckle cultivars of Russian, Canadian and U.S. origin, reproduced at the I.V. Michurin Federal Science Center in Tambov Province, were studied for the content of the main BAC groups using modern methods (spectrophotometry, HPLC-UV, HPLC-RID, and HPLC-DAD-MS).Results and discussion. The main BAC groups (the content and profile of anthocyanins, proanthocyanidins, flavonols and flavones, hydroxycinnamic acids (HCA), iridoids, and organic acids) as well as mono- and disaccharides were studied in detail. A comparative study of the biological value of domestic and foreign honeysuckle cultivars was carried out.Conclusions. The study resulted in identifying the most promising cultivars of honeysuckle according to the content of the main BAC groups.
результаты комплексной оценки сортов генетической коллекции земляники ФГБНУ «ФНЦ имени И. В. Мичурина» по химическому составу и антиоксидантной ценности плодов. По каждому исследуемому биохимическому показателю выделены лучшие сорта -источники высокого содержания сахаров (Урожайная ЦГЛ, Привлекательная, Вима Кимберли, Яркая, Кокинская Заря), аскорбиновой кислоты (Кокинская Заря, Дукат, Купчиха, Памяти Зубова, Фестивальная Ромашка, Эльсанта), антоцианов (Фейерверк, Лакомая, Привлекательная, Флора), высокой суммарной антиоксидантной активности плодов (Привлекательная, Фейерверк, Памяти Зубова). Сорта Урожайная ЦГЛ, Привлекательная, Лакомая, Памяти Зубова, Фейерверк, Флора представляют интерес как для свежего потребления и переработки, так и для дальнейшей селекционной работы на улучшенный химический состав плодов.Ключевые слова: земляника, сорта, биохимический состав, аскорбиновая кислота, антоцианы Summary. The paper presents the results of integrated assessment of the strawberry varieties from the genetic collection of I. V. Michurin Federal Research Center for chemical composition and antioxidant value of fruits. For each biochemical parameter under study, the best varieties were identified: sources of high sugar content (Urozhaynaya TsGL, Privlecatelnaya, Vima Kimberly, Yarkaya, Kokinskaya zarya); sources of high ascorbic acid content (Kokinskaya Zarya, Dukat, Kupchikha, Pamyati Zubova, Festivalnaya romashka, Elsanta); sources of high anthocyanins content (Feyerverk, Lakomaya, Privlecatelnaya, Flora). The varieties Privlecatelnaya, Feyerverk, Pamyati Zubova were revealed by high total antioxidant activity of fruits. The varieties Urozhaynaya TsGL, Privlecatelnaya, Lakomaya, Pamyati Zubova, Feyerverk, Flora are of great interest for fresh consumption and processing as well as further breeding work for improvement of chemical composition of fruits.
