Dadih is a traditional food from buffalo milk fermentation in West Sumatera, Indonesia. which is fermented for 24-48 hours at room temperature. This study aimed to determine the proximate analysis of Dadih from Kapau, Agam Regency West Sumatera, Indonesia. The measured variables were protein content, fat content, water content and, pH. The research method was a descriptive method and analysis in the laboratory. The sample used was taken in Kapau Agam Regency, West Sumatera, Indonesia. The results showed that the nutrition composition of Dadih is: protein content ranged from 7.96%, fat content ranged from 5.53%, water content ranged from 73.55%, pH ranged from 5.16. The conclusion is that Dadih has good nutritional quality.
Oksidatif stress dapat menimbulkan kerusakan sel bila antioksidan endogen tidak dapat melawan radikal bebas. Bila kerusakn seltersebut berlangsung lama, dapat menyebabkan penuaan dini dan gangguan penyakit seperti kanker, kardiovaskular, dan diabetes. Untuk membantu antioksidan endogen dalam melawan radikal bebas, dapat dibantu dengan antioksidan eksogen. Salah satunya adalah kopi. Namun, kandungan senyawa yang terkandung di dalam kopi dapat dipengaruhi proses sangrai/roasted. Derajat proses sangrai/roasting dapat mempengaruhi sifat fisik, rasa, aroma, dan kandungan kimia biji kopi. Perubahan kandungan kimia biji kopi dapat mempengaruhi aktivitas antioksidan. Penelitian ini bertujuan untuk mengetahui pengaruh derajat roasting terhadap aktivitas antioksidan biji kopi robusta Temanggung. Sampel bijikopi Robusta di identifikasi untuk memastikan kebenaran sampel, selanjutnya dimaserasi dengan aquadest 1:10. Filtrat di uji antioksidan dengan metode DPPH yang nantinya akan diperoleh nilai LC50. Hasil identifikasi diperolah bahwa sampel benar merupakan biji kopi robusta. Hasil uji antioksidan diketahui bahwa LC50 green bean, light, medium, dan dark berturut-turut adalah 82,27, 362,91, 61,46, dan 617,04. Berdasarkan hasil tersebut, diketahui bahwa aktivitas antioksidan terbaik adalah medium bean. Perubahan kapasitas antioksidan biji kopi roasted berhubungan dengan degradasi asam klorogenat, pembentukan melanoidin dan pembentukan produk reaksi Maillard.
Uneven income distribution is a problem that affects many nations throughout the world, including Indonesia, and if it is not remedied right away, the process of economic progress will be slowed. This study examines the relationship between the growth of the agricultural sector, the human development index, the labor force participation rate, and inflation in West Sumatra Province from 2007 to 2022. The Central Bureau of Statistics (BPS) of West Sumatra Province provided secondary data that were utilised in this study's quantitative methodology. Multiple linear regression is the technique used, and data processing application analytic tools are used. The results of the regression analysis reveal that while the HDI, TPAK, and inflation variables have a significant and adverse impact on income distribution inequality, the agricultural sector development variables, as measured by agricultural sector GRDP data, have a significant and positive impact. Additionally, the findings of this study demonstrate that, from 2007 to 2022, the agriculture sector development variables of HDI, TPAK, and inflation collectively (simultaneously) have a significant impact on income distribution inequality in West Sumatra Province.
One of West Sumatra's popular dairy products is Dadih, a traditional food made from buffalo milk and processed by natural fermentation in a bamboo tube. Dadih could be a local food enriched by a natural probiotic source. However, the Dadih is rarely processed into other food products due to a need for more information for farmers and the community. The innovation can be done by using it as an additional ingredient in a product, such as Gelato. Making Gelato has simple steps mixing all the ingredients with the addition of curd. This community engagement activity started with education on the good of Dadih's nutrition, followed by direct assistance in making Gelato, and then counselling groups of farmers in the district of 50 Kota. The activities were conducted on July 24, 2022, and were well responded to by the groups of farmers. Gelato processing that was carried out could produce with Dadih.
