In this study, Turkish fermented sausage (sucuk) samples from different producers were examined with respect to their biogenic-amine contents, including histamine, tryptamine, and tyramine. The difference between amine levels of the samples produced through a starter-facilitated process and those produced without using a starter was investigated. Amines were extracted from the samples using perchloric acid and analyzed by HPLC in an ODS 2 column with a UV/VIS detector at 254 nm after derivatization with dansyl chloride. Histamine and tyramine were found in all samples in the range of 6. 72 to 362. 22 and 208. 66 to 1173. 28 mg/kg, respectively. Tryptamine was detected in 15 out of 20 samples in the range of 25. 01 to 619. 11mg/kg. Statistically significant changes in amine levels of samples obtained from different producers were observed.
Some physical and mechanical properties of roasted Zerun wheat were investigated in the moisture range from 8.80 % to 23.40 % wet basis. Mechanical properties were evaluated by examining the effect of moisture content upon the grain rupture force, energy and Weibull parameters. Length, width, thickness, porosity and angle of repose increased nonlinearly from 6.09 to 6.36 mm; 4.17 to 4.18 mm; 2.66 to 2.78 mm; 37.71 % to 39.09 % and 33.02°to 37.90°, respectively when moisture content increased. The Weibull distribution fits the data for rupture force and energy. The Weibull modulus and scale parameter for rupture force varied between 3.88 and 6.20; 26.61 and 44.24N, respectively. The Weibull modulus for energy increased from 2.15 to 3.24 with increased in moisture content. Measured mechanical properties of grains showed that the brittleness and fragile structure of the roasted grain gradually lost its characteristic crispiness and become soft and ductile above 13.78 % moisture content.
A heat-resistant fungus was isolated from aseptically packaged apricot pulp. The fungus was identified as Eurotium chevalieri. Heat resistance of the fungus was studied at four different temperatures (70, 75, 80 and 83 degrees C) after activation of its ascospores for 30 min at 70 degrees C. D70, D75, D80 and D83 values of ascospores of Eurotium chevalieri were estimated by linear regression (log-survival vs. heating time) as 118.58, 34.15, 5.50 and 3.77 min, respectively. The z-value was determined in the same way (regression of log-D values vs. heating temp.) and was found as 8.23 degrees C.
