The complex of agroindustrial enterpriseis an extremely important branch of the national economy of any state. This area determines the level of food security, and can also be one of the powerful incentives for the growth of the entire economic system of the country. This is why it so important to ensure economic security of agroindustrial enterprise. The purpose of the article is to form the model for assessing the level of economic security of the agroindustrial enterprise. The subject of the study is economic security of the agroindustrial enterprise. It is proved that the effectiveness of anti-crisis measures substantially depends on information support, the formation of which at the proper level is possible when applying the developed model for assessing the level of economic security of the agroindustrial enterprise. The use in the model of quantitative and qualitative indicators can characterize the main parameters of the economic activity of the agroindustrial enterprise and allow to characterize the level of economic security. This model is based on data that were obtained during the assessment by experts who work in agroindustrial enterprises, which may not only be about professionalism, but also take into account the specifics of the studied area. As a result of obtaining one or another value of the integral indicator, the studied agro-industrial enterprise is recognized as requiring no revision of its own strategy for ensuring economic security. The generated model was experimentally applied at ten enterprises in Eastern Europe, in particular in countries such as Poland, the Czech Republic and Ukraine, to test its effectiveness. To define and substantiate our research, we applied the following general research methods: induction and deduction, comparison and systematization, synthesis and analysis, morphological analysis. The following methods are specific for our research: SAW methodology, in our work is designed to form a polyvariate decision-making model for assessing the level of economic security, as well as a method of expert evaluation, which are designed to form a list of necessary for the formation of the above model. The novelty of our research lies in the developed integrated indicator for assessing the level of economic security of agribusiness and its practical application.
In the article the essence of crisis management of Ukrainian food enterprises is considered in the conditions of economic transformations, the features of display of crisis and influence of factors of external and internal environment are certain on development of crisis, importance of the preventive adjusting of crisis displaysfor providing of food security and ant crisis events for food enterprises.
The article presents statistics on the number of pigs and poultry in Ukraine and Odessa region for 1990-2019 and the results of the calculation of needs for premixes and protein-vitamin supplements (PVS) in Ukraine, and in particular, in Odessa region, the average increase and volumes of compound feed consumption. The main purpose of the calculation is to determine the production potential of premixes and compound feeds in Ukraine and in the region, the cost of compound feeds in poultry farming using different types of premixes and PVS.According to the Main Department of Statistics in Odesa Oblast, the number of pigs has decreased over the past five years, and the number of poultry has increased by 7.3%.The calculation of the need for premixes and PVS is determined by the volume of feed production, the need for which depends on the number of livestock and poultry, data on their average growth and consumption of feed.The method of calculating the number of pigs and poultry (forecast) depending on the needs of the population in livestock food, as well as the results of the forecast of the number of pigs and chickens in Ukraine and Odessa region for 2020-2023, which amounted to 5702, 0 and 173.0 thousand goals, 224.8 and 3.3 million goals, respectively.The calculations taking into account the export-import potential of raw materials showed that in the Odessa region there is a shortage of capacity, namely: P mf forecast = 104819.6 thousand tons. 0, P mf forecast ≥ M year, ie 104819.6 9000.0 thousand tons, so in the Odessa region should provide a feed mill with a capacity of 15 thousand tons per shift in two shifts is appropriate and reasonable. The potential of production and sale of compound feeds in the Odessa region, which is up to 8500 thousand tons of feed, 85 thousand tons of premixes and 2430 thousand tons of PVS, calculated the main producers and consumers of feed products.The estimated economic efficiency of the use of feed enriched with complex premixes, as a result of which it is possible to reduce the cost of obtaining 10 eggs to 280 million UAH. per year, and in the fattening of suckling piglets - zeko-nomity in the production of pork up to 3.15 million UAH.
For the first time, the processes occurring during caramelization of honey are studied and the biochemical properties of the obtained substances are studied. Infrared spectra, humidity and viscosity were analyzed, the size and size distribution of nanoparticles, elemental composition, oxymethylfurfural content and diastase number of caramelized honey were studied. As a result of research, the difference between the sizes of nanoparticles of natural and caramelized honey was established: caramelized honey is characterized by much smaller (1.5–2.0 times) particle sizes than for natural bee honey. Smaller particle sizes of caramelized honey, after thermochemical treatment in the presence of specially selected catalysts, increase its biochemical activity. The paper also describes a new method of processing crystallized honey and the characteristics of the obtained liquid honey for a long shelf life (at least 1 year). It is shown that with the help of a new method of low-temperature isothermal accelerated processing in a microwave reactor MWR-SPR, it is possible to dissolve the crystallized honey to a liquid state. The proposed method reduces the time for the dissolution of honey in comparison with the known method of heat transfer by 250 times. The properties and structure of particles of crystallized and liquid honey after low-temperature, isothermal, accelerated processing with the help of microwave technology of ultrahigh frequencies at 50 °C, for 60’s are investigated. The number and particle size of pollen in honey is reduced by 10 times, and the size of the crystals of glucose and sucrose after processing is reduced by 2–5 times. The method of angular distribution of the laser beam shows a reduction of the average size of sugar macromolecules in the processed honey in 2 times, compared with crystallized honey. It is proved that the proposed low-temperature, isothermal, accelerated processing of honey in a microwave reactor helps to maintain a high diastase Gotha number – 10–11, and the content of hydroxymethylfurfural does not exceed 3–6 mg/kg of honey. The results of X-ray fluorescence spectroscopy confirm that the chemical and element-oxide composition of honey after treatment is almost unchanged. Analyzes of data on chemical and biological oxygen consumption show that in samples of liquid honey, after dissolution by the proposed method, the biochemical activity of honey is reduced only twice, which is much less than during the dissolution of honey by traditional heat transfer. All this has a positive effect on the stabilization of liquid honey after dissolution, on its stability during long-term (up to 1 year) storage. The chemical properties of wax, propolis, honey before and after the caramelization process have been studied. Based on the results obtained from caramelized honey, wax and propolis created a chewing gum with biologically active components for the prevention and treatment of periodontal diseases (gingivitis, periodontitis and periodontitis). Clinical studies using chewing gum based on honey, wax and propolis for the treatment of periodontal tacine in dentistry confirmed a positive effect in 72.5% of patients.
