Pandan wangi (Panndanus amaryllifolius) merupakan tanaman yang biasa digunakan sebagai pewangi dan pewarna makanan yang memiliki aktivitas anti bakteri. Kajian ini bertujuan untuk mengetahui pengaruh ekstrak daun pandan wangi (Panndanus amaryllifolius) pada air minum terhadap kualitas daging ayam broiler. Beberapa hal yang menjadi patokan kualitas daging ayam broiler yang baik diantaranya aroma daging, tekstur daging, rasa khas daging, dan warna daging. Hal-hal tersebut menjadi indikator akan mutu daging yang dikonsumsi. Kajian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 4 perlakuan dan 4 ulangan dimana setiap ulangan terdiri dari 4 ekor ayam broiler. Pemberian ekstrak daun panda wangi (Panndanus amaryllifolius) pada air minum ayam broiler diberikan pada umur 15 hari selama 14 hari dengan konsentrasi ekstrak yang berbeda yaitu, 0 ml/liter air (PO), 5 ml/liter air (P1), 10 ml/liter air (P2), 15 ml/liter air (P3). Parameter yang diamati meliputi, tekstur, warna, aroma/bau, dan rasa. Data dianalisis menggunakan analisis ragam dan uji lanjut menggunakan uji jarak berganda Duncan. Hasil penelitian menunjukkan bahwa ekstrak daun pandan wangi (Panndanus amaryllifolius) tidak memberikan pengaruh nyata (P>0,05) terhadap kualitas dan warna, namun memberikan pengaruh nyata terhadap tekstur, aroma/bau dan rasa (P<0,05). Berdasarkan data setiap parameter dengan berbagai perlakuan maka dapat direkomendasiakan perlakuan terbaik adalah P3 (15 ml/liter air).

In getting positive results, it is necessary to test plant species that are in accordance with the standards of chicken needs. In this case, it has been determined through the feasibility of herbal medicines such as herbs and papaya leaves as Antibiotic Residues and improving egg quality. The results showed that the addition of papaya leaf extract in drinking water (P2) could increase the thickness of the shell, the addition of papaya leaf extract in combination with herbal medicine (P3) could increase the value of the egg yolk colour index, and there was a tendency to increase the colour of the shell in the P2 and P3 treatments. In addition, there were no antibiotic residues in chicken eggs in all treatments which indicated that the eggs were healthy and safe for consumption.
