Karbohidrat utama ubi jalar ungu adalah pati, serat pangan (selulosa, hemiselulosa) serta beberapa jenis gula seperti maltosa, sukrosa, rafinosa, fruktosa dan glukosa. Adanya kandungan karbohidrat dan serat pangan memungkinkan ubi jalar ungu untuk dimanfaatkan sebagai sumber prebiotik baru. Ubi jalar ungu dimanfaatkan sebagai sumber prebiotik pada pangan fungsional (functional food) berupa pangan sinbiotik yaitu yoghurt drink. Penelitian ini bertujuan untuk menentukan aktivitas prebiotik ubi jalar ungu, total bakteri asam laktat (BAL), total asam tertitrasi (TAT) dan tingkat kesukaan konsumen pada yoghurt drink dengan penambahan ubi jalar ungu. Hasil penelitian menunjukkan bahwa tepung ubi jalar ungu memiliki nilai aktivitas prebiotik sebesar 0,36. Aktivitas prebiotik ubi jalar ungu bernilai positif yang menunjukkan potensinya sebagai sumber prebiotik. Yoghurt drink yang dihasilkan memiliki total BAL sebesar 1,0 x 108 – 2,1 x 108 CFU/ml dan TAT sebesar 0,029 – 0,306%. Semakin besar persentase penambahan tepung ubi jalar ungu maka semakin tinggi tingkat kesukaan konsumen pada yoghurt drink.
Red palm oil can be a source of beneficial ingredients in various foods due to its high total carotene level. This work examined the influence of red palm oil to palm stearin ratio on the Nanostructured Lipid Carrier's turbidity, transmittance, viscosity, β-carotene content, color lightness, and hue. For this purpose, Nanostructured Lipid Carriers were prepared by hot homogenizing red palm oil and palm stearin at several ratios (1:9, 2:8, 3:7, 4:6, and 5:5 (w/w)). According to the present investigation, the ratio of red palm oil to palm stearin primarily affected the turbidity, transmittance, viscosity, β-carotene concentration, color brightness, and hue of NLCs. Furthermore, the study found that adding red palm oil significantly raised the NLC's β-carotene content and turbidity. The ratio of red palm oil to palm stearin that produced the most stable NLC was 5:5 (w/w)
