Background: Data Riskesdas 2013 shows that the average amount portion of vegetable consumption in people aged 10 years or older is only 0.5 portions while the vegetable consumption category is said to be "sufficient" is at least 5 portions per day for 7 days a week. Banana blossom is a vegetable and commonly found in Bangka Belitung Islands Province. Banana blossom processing as a source of vegetables rich in antioxidant compounds and chicken meat as a source of animal protein, needs to be done by processing into shredded banana blossom-chicken meat.Objectives: To determine the acceptability and antioxidant activity level of shredded banana blossom-chicken meat.Methods: This research is true experimental. Shredded banana blossom-chicken meat, made using 3 treatment, banana blossom 75%:chicken meat 25% (F1), banana blossom 50%: chicken meat 50% (F2), and banana blossom 25%:chicken meat 75% (F3). Furthermore, the acceptance of taste, colour, aroma, texture, overall, and antioxidant activity level of shredded banana blossom-chicken meat. Results: There was a significant difference in the acceptance of the colours of shredded F1, F2 and F3 (p = 0,00), while aroma, taste, texture and overall of the shredded F1, F2 and F3 were not significant (p> 0.05). Shredded F3 (banana blossom 25%: chicken meat 75%) is most preferred based on the parameters of colour, aroma, taste, texture and overall, and has the highest antioxidant activity value are 53.74%.Conclusions: Shredded banana blossom-chicken meat has a good acceptability and has a high antioxidant activity level.[AN1]
Stunting merupakan kondisi gagal tumbuh pada anak balita akibat kekurangan gizi kronis. Stunting mempengaruhi pertumbuhan dan perkembangan otak, serta meningkatkan risiko menderita penyakit kronis saat dewasa. Pengetahuan, sikap, dan perilaku merupakan faktor yang dapat mempengaruhi status gizi. Kurangnya pengetahuan gizi berdampak pada kemampuan seseorang menerapkan informasi gizi dalam kehidupan. Upaya meningkatkan pengetahuan melalui pendidikan gizi. Isi Piringku merupakan edukasi pentingnya asupan gizi seimbang sesuai kebutuhan anak usia 4-6 tahun. Edukasi gizi indahnya pelangi dipiring makanku di Kelurahan Bukit Betung menjadi upaya mengatasi masalah stunting. Tujuan kegiatan meningkatkan pengetahuan dan perubahan sikap guru PAUD, ibu PKK, dan kader dalam penerapan indahnya pelangi di piring makanku. Metode edukasi adalah penyuluhan dengan alat bantu booklet dan lomba indahnya pelangi di piring makanku. Kegiatan dilaksanakan di Gedung Wanita Kabupaten Bangka selama dua hari, yaitu edukasi gizi di hari pertama dan lomba indahnya pelangi di piring makanku di hari kedua. Sasaran kegiatan guru PAUD, ibu PKK, dan kader sejumlah 55 orang. Analisis hasil pretest dan posttest menjadi tolak ukur mengetahui adanya peningkatan pengetahuan. Perubahan sikap peserta berdasarkan hasil penilaian lomba dengan kriteria citarasa, variasi pengolahan, penampilan, penyajian, ketepatan porsi, dan kebersihan. Hasil kegiatan diketahui peserta adalah para ibu (96,4%) dengan rata-rata usia 41 tahun dan 61,8% sudah pernah mendapat informasi isi piringku. Terjadi peningkatan pengetahuan peserta dari 86,3% menjadi 92,7% dengan kategori baik. Target kegiatan telah tercapai dengan adanya peningkatan pengetahuan > 80% dan adanya perubahan sikap para guru PAUD, ibu PKK, dan kader dalam penyediaan makanan bergizi seimbang berdasarkan konsep isi piring makanku.
Singkong merupakan sumber karbohidrat dan serat. Konsumsi serat merupakan salah satu upaya mencegah salah satu masalah gizi di Indonesia seperti obesitas. Oleh karena itu, penggunaan Mocaf sebagai salah satu sumber serat yang diharapkan dapat membuat produk baru berupa ayam goreng crispy yang kaya akan kandungan serat dan dapat membantu mengurangi resiko terjadinya obesitas.Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 2 formulasi dan 3 pengulangan. Formulasi pertama penggunaan Mocaf yaitu 50% dan tepung terigu 50%. Formulasi kedua yaitu 75% dan tepung terigu 25%. Analisis statistik dengan uji Mann-Whitney U dengan panelis 30 orang. Berdasarkan hasil penelitian menunjukkan tingkat kesukaan panelis dan hasil analisis statistik untuk pengaruh formulasi terhadap tingkat kesukaan rasa, aroma, warna, dan tekstur ayam goreng crispy menunjukkan bahwa tidak ada perbedaan yang nyata. Analisis kadar serat menggunakan sampel formula 2 mempunyai nilai serat sebesar 12,67% dalam 4 gram sampel. Upaya diversifikasi pangan dengan ayam goreng crispy dengan penggunaan Mocaf bisa dijadikan alternatif pangan yang sehat bagi masyarakat, selain itu produk ini mempunyai kandungan serat.
Fish contains nutrients and functional compounds that are good for human health. Nutritional and chemical compounds that act as functional foods include protein, vitamin E, fats and minerals, which have good effects on health, such as preventing cardiovascular disease. Pempek is a traditional food from South Sumatera, Indonesia. This study evaluates the proximate of pempek instant flour and sensory evalution of pempek from mackerel fish (Scomberomorus commersonii). The values ranged on dry weight basis for: moisture (13,67-18,60%/100 g), ash (2,86%-6,40%/100 g), protein (33,68%-53,80%/100 g), fat (0,61%-2,35%/100 g) and total carbohydrate (18,84%-49,17%). Formula 1 (75% of mackerel fillets and 25% of tapioca flour) presented high moisture, ash, protein, and fat values, meanwhile lower total carbohydrate. Formula 2 (50% of mackerel fillets and 50% of tapioca flour) received the highest scores in sensory evaluation based on overall acceptance.
Children under five are an age group that susceptible to malnutrition and considered as one of the vulnerable groups in nutrition. Malnutrition in infants may result in disruption of physical growth and intelligence of children. Failure to grow due to malnutrition in infancy (the golden age) will have a bad impact on the next stages of life, this will be difficult to restore to a normal state. National stunting prevalence in 2013 was 37.2%, which meant there was an increase compared to 2010 (35.6%) and 2007 (36.8%). The prevalence of stunting in infants in Bangka Belitung Province in 2007 was 36% and the Riskesdas 2013 data showed the prevalence of stunting was 30%. However, there was a decrease in the prevalence of stunting, it has not yet reached the national target for nutritional improvement (20%). This study aimed to study the determinant factors of stunting occurred in children aged 0-24 month. This study was an analytical survey with a cross-sectional design. The respondents are children aged 0-24 months from 7 regencies and cities in the Bangka Belitung. Univariate and bivariate analysis was performed using the Chi-square test. Meanwhile, multivariate analysis was conducted using logistic regression. Results, the number of stunted children was 20.3%, especially children aged 0-24 months in Bangka Belitung Province. The families with stunted or nonstunted children known to live in the village. Most parents were known to have an elementary level of education. Consecutively, fathers were all working and most mothers did not work. From the data above, it was concluded that the factors that were not significantly related to nutritional status (TB/U) were the age, sex, father's education, mother's education, father's occupation, mother's working status, mother's age, number of family members and residence. Factors that are significantly related to nutritional status (TB/U) were only the age of the child.
