RESUMO -O conhecimento da composição química dos alimentos é fundamental para se avaliarem a disponibilidade de nutrientes e o seu consumo por populações. Neste trabalho, o pequi (Caryocar brasiliense, Camb.) foi caracterizado pela composição centesimal e pela presença de compostos bioativos na polpa e na amêndoa. Os dados do perfil lipídico mostram alto teor de lípides tanto na polpa quanto na amêndoa, destacando-se nos mesmos a presença dos ácidos graxos insaturados, predominando o ácido oléico como principal componente entre os ácidos graxos. Foi observada também a relação entre os elevados teores de ácidos graxos insaturados com os compostos fenólicos e carotenóides presentes, tendo a polpa quantidades mais expressivas dessas substâncias quando comparada à amêndoa, além de conter uma quantidade superior de fibra alimentar. Os resultados obtidos abrem a perspectiva de se utilizar o pequi como fruto que apresenta, na sua composição, compostos importantes para a formulação de uma dieta saudável. CHEMICAL COMPOSITION AND BIOACTIVE COMPOUNDS IN THE PULP AND ALMOND OF PEQUI FRUITABSTRACT -The knowledge of the chemical composition of foods is basic for evaluate the nutrients availability and its consumption for the population. In this work, the pulp and the almond of pequi fruit (Caryocar brasiliense, Camb.) were characterized by the centesimal composition and the presence of nutrients. The results showed high amount of lipids and in the fatty acids profile, the oleic fatty acid was the main component. The presence between high unsaturated fatty acids and antioxidant compounds (phenolic acids and carotenoids) was correlated with the fruit protection. In the pulp was observed too high amount of alimentary fiber. These results are suggesting the pequi utilization in a healthful diet preparation.
a b s t r a c tThe effect of butylated hydroxytoluene/butylated hydroxyanisole blend (BHT/BHA), and rosemary and oregano extracts, added individually or in combination, on lipid oxidation and fatty acid composition was investigated on irradiated frozen beef burgers. Irradiation treatment was carried out using a 60 CO semiindustrial irradiator at doses of 6, 7 and 8 kGy, and then the treated meat samples were stored at À20 C for 90 days. Lipid oxidation and fatty acid composition of beef samples were evaluated by measurement of TBARS and gas chromatography, respectively. The results of the experiment showed that rosemary extract, applied alone and in combination with either BHT/BHA or oregano extract, was more effective in maintaining a low oxidation level in the samples compared to oregano extract used individually or in combination with BHT/BHA. Results also showed no significant differences (p > 0.05) in fatty acid composition in all analyzed samples, although some changes in terms of decreased PUFA and MUFA, beside of slight increase of SFA content were observed. However, these differences do not correlate positively neither with the irradiation dose nor the type of antioxidant. Thus, there is a potential application of these spices as natural antioxidants in irradiated meats.
Bioactive compounds extracted from natural sources can benefit human health. The aim of this work was to determine total phenolic content and antioxidant activity in extracts of Euphorbia tirucalli L. followed by identification and quantification of the phenolic compounds, as well as their antibacterial activities. Antioxidant activities were determined by DPPH and ABTS•+ assay. Identification of phenolic compounds was performed using high-performance liquid chromatography (HPLC), and antimicrobial activities were verified by agar dilution methods and MIC values. Total phenolic content ranged from 7.73 to 30.54 mg/100 g gallic acid equivalent. Extracts from dry plants showed higher antioxidant activities than those from fresh ones. The DPPH EC50 values were approximately 12.15 μg/mL and 16.59 μg/mL, respectively. Antioxidant activity measured by the ABTS method yielded values higher than 718.99 μM trolox/g for dry plants, while by the Rancimat® system yielded protection factors exceeding 1 for all extracts, comparable to synthetic BHT. Ferulic acid was the principal phenolic compound identified and quantified through HPLC-UV in all extracts. The extracts proved effective inhibitory potential for Staphylococcus epidermidis and Staphylococcus aureus. These results showed that extracts of Euphorbia tirucalli L. have excellent antioxidant capacity and moderate antimicrobial activity. These can be attributed to the high concentration of ferulic acid.
