The aim of this study was to evaluate the hygienic and sanitary conditions of acai processing industries in the municipality of Imperatriz-MA, through the application of a checklist of good manufacturing practices obtained from the RDC 218/05 devices, and subsequent assessment of attendance percentage of classification items in accordance to RDC Resolution Nº. 275/02-ANVISA. Studied industries were classified in Group III, with the requirement attendance of ≤ 50. Company C had the lowest percentage of adequacy with only 29.8%. The factors that contributed to this unsatisfactory assessment included the absence of procedures to ensure açai integrity and quality, handlers' lack of professional qualification, inadequate personal hygiene habits, and poor physical, structural and technological installations of the facilities investigated.
