The purpose. To overview findings of investigation in the role of Ukrainian soils and control over edapic organic carbon in a context of global food safety and stable agrarian production at climate fluctuations. Methods. Theoretical generalization and comparison, abstract-and-logic, monographic, expert, calculationand-analytical. Results. The leading part of Ukraine in formation of global food safety is shown. The tentative estimation of contribution of soils of Ukraine in global problem of deposition of carbon is carried out. Scales of losses of organic carbon because of irrational use of lands are analyzed. Directions of control over procreation of organic carbon in black earth of Ukraine for support/increase of its stores and maintenance of neutral degradation of lands are considered. Offers in plans of action for augmentation of potential of control over the procreation of organic carbon in chernozem soils of Ukraine are stated. Conclusions. At control over organic carbon of soils of Ukraine it is necessary to be guided by increase of potential of cultivated lands on deposition of carbon and reduction of greenhouse effect. Rational use of lands and prevention of degradation of soils can soften consequences of climate fluctuation and raise the level of food safety not only in Ukraine, but all over the world. Sequestration of carbon in soils can raise stability of agrarian production in conditions of climate fluctuation.
Goal.To analyze the current state of soils of Ukraine, to substantiate the measures of legislative, regulatory, scientific, and information support of balanced land use to overcome soil degradation using the international experience of soil protection and land use. Methods. Analysis, synthesis, theoretical generalization and comparison, abstract, monographic, expert. Results. The results of the study of ways to overcome soil degradation to ensure balanced land use, namely: a repeated continuous soil survey (or adjustment); soil cover monitoring taking into account European experience; improvement of the national system of agrochemical certification of agricultural lands; legislative and regulatory support of soil protection; improvement of information support due to the formation of soil databases with expanded assessment, cartographic and forecasting capabilities for the functioning of the Ukrainian Soil Information Center; development and adoption of the National Soil Protection Program and regional soil protection programs; creation of the State Service for Soil Protection and Monitoring; improvement of the quality assessment of soils and determination of the objective price of land; actualization of scientific research in soil protection, their material, and technical support; use of international experience in soil protection and land use. Conclusions. The country has every opportunity to create an exemplary system of soil resources management and implement to the best the provisions of the Constitution of Ukraine, which recognizes lands (soils) as national property under special state protection. This requires reformation of the system of state control over the condition of soils and regulation in the field of soil protection and their fertility, elaboration of the new state policy, as well as and development and adoption of a new strategy for the development of land protection in Ukraine until 2030.
The purpose. Substantiation and development of protein-fatty basis for sacchariferous confectionery products with the increased biological value, downgraded caloricity and extended shelf life which can be used for organization of balanced diet for sportsmen. Methods. Organoleptic and physicochemical parameters of protein-fatty basis, fat content in olive seeds are determined by means of standard techniques; amino acid composition -by ISO 13903:2005; oxidative stability -by rapid method of «active oxygen» at temperature 85±1°С at easy approach of light and air in reactor of barbotage type with constant feed rate of air and mixing; period of induction is determined graphically on curves of change of peroxide value. To design experiments and process data they applied mathematical methods with the use of software packages Мiсrosoft Ехсеl and Statistica. For calculation of ratio of ingredients in protein-fatty basis they used Sheffe simplex-trellised plan. Results. Sampling of ingredients of protein-fatty basis is proved. The volumetric part of olive seeds is counted which matches to ratio 2:1:1 on essential amino acids leucine:isoleucine:valine. Calculation of the optimum content of olive seeds in protein-fatty basis with the purpose of delay of oxidation processes is carried out: seeds of sunflower -20±5% vol., flux -50±5, sesame -30±5% vol. Conclusions. Sampling and content of ingredients is substantiated of protein-fatty basis balanced on essential amino acids with branched circuit (leucine, isoleucine, and valine) and tryptophan, and also irreplaceable polynonsaturated fatty acids. The developed protein-fatty basis is used in structure of sacchariferous confectionery products that promotes raise of biological value, decrease of caloricity and raise of oxidative stability last.Key words: feed of sportsmen, vegetable oils, olive seeds, essential amino acids, polynonsaturated fatty acids.

Analytical, comparative, statistical, Results. Conceptual approaches to searching criteria of physical degradation are justified. On the basis of comparative long study of virgin soil (long fallows) and arable soils some criteria are offered which can be used for diagnostics of physical degradation. The survey of quantitative and quality criteria of physical degradation of arable soils is realized. Assessment is made of propensity of soils to physical degradation and speed (intensity) of development of degradation processes on concrete instances. Diagnostic parameters are specified and preliminary specifications of physical degradation of arable soils are determined. Conclusions. On the basis of own researches and literary data some offers are made (for discussion and refinement) about the list of indexes and specifications of physical degradation of arable soils.

Use of results of international project in study and spread of protective cultivation of soil in the world. Results. In Germany they use conservative, minimum and zero soil cultivation. Probes are carried out in long stationary experiments with the use of the wide program of concomitant observation with participation of leading experts of the country. Conclusions. The newest methods of soil cultivation have obvious soilprotective, economic and social effect. The acquired experience needs to be considered in analogous operations in Ukraine.
