Sie reuboh is a traditional festive cuisine from Aceh Besar district – Aceh Province. Sie reuboh named by Acehnese for a 2:1 comparison of red-meat and separated beef tallow boiled with palm vinegar and blended spices. It reported having a long shelf life, exquisite of taste and flavor. Normally, Acehnese cooks this cuisine with traditional clay pot. As cooking utensil, clay pot is vulnerable to breakage and has slow heat propagation compared to stainless steel pot which has long usage and good heat conductor. This study aims to compare the quality of produced siereuboh based on its sensory quality (Hedonic and Qualitative Descriptive Analysis = QDA) and consumer acceptance by hedonic test. Sie reuboh was cooked in two types of cooking ware (earth clay pot and stainlesssteelpot) in four times repetitions. The obtained data is statistical analyzed with ANOVA and DMRT. The results showed that sie reuboh cooked with stainless steel pot is preferable in terms of color, aroma, flavor (P≤0,01) than one cooked with clay pot. Furthermore, the QDA showed that from ten examined attributes, brightness, sour and spicy aroma and umami flavor of sie reuboh cooked with stainless steel has higher notes (P≤0,01) than other treatment. As conclusion, it can be stated that stainless steel provides sie reuboh with better sensory properties and higher consumer liking. Nutmeg oil from South Aceh is one of the main commodities in Indonesian essential oils trading. Specially, 70-80% Indonesian nutmeg oil trading origin is from South Aceh. On the other hand, a business risk of nutmeg oil is on collectors district, so these actors to be critical point in nutmeg oil production. The objectives of this research were to determine risk factors and to design risk mitigation in nutmeg oils supply chain on South Aceh. The technique used was Failure Mode and Effective Critically Analysis (FMECA). Data collecting according to expert's survey and background and qualification of experts were academicians, researcher, and practitioners. Academicians and researchers were PhD holders with 10 years experience in agriculture development, practitioners graduate minimally, practitioners were bachelor degree holders with 15 years experience. The result of the study showed that on farmers, the highest risks were on pest and disease attack and price fluctuation, meanwhile on agro-industry actors, the highest risks were on quality product fulfillment and price fluctuation. To arrange over supply, policy analysis was needed for the establishment of business units initiated by local governments.
Development of the Gayo’s Science Park’s (GSPs) aims to improve the regional economy based on commodity Gayo coffee. Sustainability aspect assessed including technique, economic, social as well as ecology. The objective of this paper was to design the sustainability development of the (GSPs). In this paper we only limits on qualitative judgment of the GSPs development design. In technical aspect discusses how to increase productivity Gayo coffee which currently ranges 650-700 kg ha−1, even though the potential productivity reaches 1.2-1.5 ton ha−1. For the economic aspect focuses on how the GSPs continuing coffee-based production down-stream. In this design also discussed the ecological, technical and social aspects such as increasing productivity, use of organic matter on agriculture as well in plants cultivation conservation zone. To sustain the GSPs, we design a business that will be developed, namely through construct the small-plants (5 kg per running production) and Gayo coffee superior seeds supplier. Therefore, we use several techniques to construct its planning, such as business plan canvas and qualitative SWOT analysis, as well as introducing the innovative technology and site-plan.
Jernang is a non-timber forest product (NTFP) which has started to be traded and become a high-value commodity. Jernang is a type of rattan that produces a resin known as “dragon's blood” which has many benefits such as dye raw materials in the ceramics, marble, wood, paper and pharmaceutical industries. Aceh province is one potential area for Jernang development. Supply chain is a complex system that has elements that are orderly, interrelated, dynamic, have specific goals and are probabilistic. In the Jernang supply chain there are risks that can cause losses and failures in production. Failure in production does not only occur at the end process but can also occur at the beginning or when the production process is being carried out. Through the Failure Modes and Effect Analysis (FMEA) method, it is expected that each form of failure can be identified in the production process. The results identified indicate that nineteen risk factors at the producer level. Based on the calculation of Risk Priority Number (RPN), the risk of decreasing production results is the most important risk. As such, this risk is the first priority that must be addressed.
