“…Research has typically been focused on mussel culture. Consequently, a wide variety of works are available about mussel growing patterns and conditions (Cusson and Bourget, 2005;Filgueira et al, 2007;Gangnery et al, 2004;Gazi, 2012), bio-deposits on mussel breeding areas (Alonso-Pérez et al, 2010;Commito et al, 2008;Fréchette, 2012;McKindsey et al, 2009) or bioaccumulation of pollutants on growing mussels (Fernández et al, 2012;Hervé-Fernández et al, 2010;Rožmarić et al, 2012;Suárez et al, 2012;Zaldívar et al, 2011), among others. Most of the few works concerning the mussel processing industry focus on the exploitation of mussel cooking juices, to produce concentrated juices (Cros et al, 2004(Cros et al, , 2005 or to recover valuable compounds (Chan et al, 2007;Guerra et al, 2005;Pintado et al, 1997), although there is also some research on mussel shell exploitation (Barros et al, 2009a;Paz-Ferreiro et al, 2012).…”
