A Review on General Nutritional Compounds and Pharmacological Properties of the Lentinula edodes Mushroom

Abstract: Lentinula edodes is a macrofungus with great potential for therapeutic applications and serves as a model for investigating functional fungi properties and isolating pure compounds for pharmaceutical use. Mushrooms have a great nutritional value and present medicinal molecules including polysaccharides, terpenoids, sterols and lipids, that participate actively in several human disorders and modulate mechanisms involved in the immune system regulation. This review will focus on general nutritional compounds and… Show more

“…Due to its ability to bioconvert, L. edodes has been traditionally cultivated to harvest fruiting bodies as superior quality food for human consumption. Additionally, bioactive compounds of L. edodes have been reported to have various medicinal properties, such as antivirus, immunomodulation, antitumor, and antioxidation3.…”

“…Lentinula edodes, which is one of most consumed mushrooms in the world and is famous for its nutritional properties and pharmacological effects and its invaluable effective bioconversion for agricultural wastes, is the most widely cultivated edible mushrooms in the world and ranks second behind only Agaricus bisporus in terms of worldwide production [1][2][3]. For hundreds of years, medicinal mushrooms such as L. edodes have been used as decoctions and essences and are applied as alternative medicine in China, Korea, Japan and eastern Russia [4].…”

“…Mushroom polysaccharides are considered to be valuable functional ingredients due to their numerous bioactivities (Ruthes, Smiderle, & Iacomini, ). As one of the most popular edible mushrooms, Lentinula edodes , commonly known as shiitake, are widely used in food and medicine for their nutritional and pharmacological components, such as proteins, peptides, polysaccharides, terpenoids, and sterols (Finimundy, Dillon, Henriques, & Ely, ; Xu, Yan, Tang, Chen, & Zhang, ). Of the bioactive components, L. edodes ‐derived polysaccharides characterized by the β (1→3)‐linkage in structure are the mostly widely studied (Finimundy et al, ; Xu et al, ).…”

Specifically, previous studies on L. edodes ‐derived polysaccharides had mainly focused on the immuno‐modulating and anti‐tumor effects, and their corresponding mechanisms at the levels of molecules, cells, and tissue (Finimundy et al, ; Wang et al, ; Xu et al, ).…”
