A Simulation Approach for Waste Reduction in the Bread Supply Chain

Abstract: Background: Bread, a basic need for the survival of human beings, is highly perishable, has a short shelf-life, and loses its quality and potency after its date of expiry. This leads to a considerable amount of bread waste and loss in the economy. This study explores and analyses the most common causes of wastage in the bread supply chain and proposes key strategies for waste mitigation in bread-producing industries in the context of Indian bakeries. Methods: Based on a systematic literature review and pilot s… Show more

“…Despite its importance in the human diet, bread has a short shelf life of around 3-6 days at room temperature. This is due to its high nutrient content, which makes it susceptible to decay and staling (Taglieri et al, 2021;Bhardwaj et al, 2023;Immonen, 2023). Moreover, the baking process transforms the starch into a digestible gelatinized form in bread, thereby making it vulnerable to microbial attack (Ben Rejeb et al, 2022).…”

“…Furthermore, it facilitates the segregation of uncontaminated BW, opening up opportunities for its valorization in other processes. Meanwhile, Bhardwaj et al (2023) proposed a strategic approach which concerns the issue of BW returned from retailers under the TBA scheme as well as maintaining the quality of returned BW and creating a hygienic environment. The study involved five Indian bakery manufacturers (A, B, C, D, E) implementing BW reduction strategies.…”

“…The simulation used resource inputs and other data based on financial aspects to observe the business performance at different stages of the supply chain [69]. A simulation-based approach imitates a situation, circumstance, process, or operation so as to evaluate the risks or barriers in a supply chain system [70]. The simulation technique helps stakeholders and business users test the supply chain activities and performance level in a virtual environment and provides organisations an opportunity to avoid these barriers in real-life situations.…”
