Abstract:Analytical data of some common fruits were published in 19501 and 1958;2 these have been extended by determinations of the potassium and phosphorus contents of further samples taken over a period of about 3 years. Some consideration has been given to the use of these values to calculate the fruit content of products such as jam, but as will be shown below, care must be exercised when such calculations are applied to samples of unknown origin.
