Zingiber purpureum Roscoe, known as plai in Thailand, is a perennial plant of the Zingiberaceae family and has traditionally been used in Southeast Asian countries to treat inflammation, pain, and asthma. In this study, we performed the characterization of the volatile constituents in ethyl acetate extracts of plai. Ethyl acetate extracts derived from the rhizomes of plai were subjected to gas chromatography–mass spectrometry, and the key peaks in the total ion current chromatograms were annotated or identified. In total, twenty-one compounds were identified using isolation procedures or standards, and nine compounds were annotated by comparing their Kovats retention index (RI) and electron ionization (EI) mass spectra with those in the literature. Most of the identifications were inconsistent with the tentative annotations found via library search and suggested that some peaks were incorrectly assigned in previous studies. Thus, to avoid further misannotations and contribute to the research on dereplication, the RI value, EI mass spectral data, and NMR spectroscopy data of the isolated compounds are reported.

Umbelliferous (Apiaceae) vegetables are widely consumed worldwide for their nutritive and health benefits. The main goal of the current study is to explore the compositional heterogeneity in four dried umbelliferous vegetables viz, celery, coriander, dill, and parsley targeting their volatile profile using gas chromatography-mass spectrometry (GC–MS). A total of 133 volatile metabolites were detected belonging to 12 classes. Aromatic hydrocarbons were detected as the major components of the analyzed vegetables accounting ca. 64.0, 62.4, 59.5, and 47.8% in parsley, dill, celery, and coriander, respectively. Aliphatic hydrocarbons were detected at ca. 6.39, 8.21, 6.16, and 6.79% in parsley, dill, celery, and coriander, respectively. Polyunsaturated fatty acids (PUFA) of various health benefits were detected in parsley and represented by roughanic acid and α-linolenic acid at 4.99 and 0.47%, respectively. Myristicin and frambinone were detected only in parsley at 0.45 and 0.56%. Investigation of antibacterial activity of umbelliferous vegetables n-hexane extract revealed a moderate antibacterial activity against Gram-positive and Gram-negative bacteria with higher activity for celery and dill against Staphylococcus aureus with inhibition zone 20.3 mm compared to 24.3 mm of the standard antibacterial drug.

The study aims to find out the effect of ginger mass ratio on the physicochemical and sensory characteristics of liang tea. The ingredients of liang tea was consisting of the leaves of D.chinensis, T.spathacea, O.vulgare, P.amaryllifolius, stem bark of secang woods (Caesalpinia sappan), midrib skin of lidah buaya (Aloevera chinensis) and rhizome of ginger with certain mass ratio. The treatment was in the form of mass ratio of liang tea and ginger rhizome powder (20:0; 20:1; 20:2; 20:3; 20:4; 20:5; 20:6; 20:7). Parameters to observed are physical characters include color, pH and chemical characters include qualitative phytochemical testing, vitamin C content, total phenol content, total flavonoid content and antioxidant activity with DPPH inhibitory activity and followed by sensory characteristic. The results showed that the formulation of the mass ratio of liang tea:ginger 20:0 possess the highest value on total phenolic content, flavonoid content and antioxidant activity (43.62 ± 5.64 mg GAE/g, 39.69 ± 1.32 mg QE/g and 56.02 ± 1.74 % respectively). The color value of tea which possess the highest phytochemical content and antioxidant activity are *L value (28.6±0), *a (4.1±0), *b (3.7±0), *c (5.5±0) and *h (42.35±0.14). Sensory characteristic showed that liang tea and ginger with mass ratio 20:0 was the best result, with colour value (3.93±0.91), flavor (3.57±0.94), taste (3.60±0.97), sweetness (3.77±0.97) and fondness overall (3.80±0.85) Based of the results of Index effectivity showed that liang tea and ginger with mass ratio 20:0 showed the best formulation as rich-antioxidant liang tea.
