Application of a puffer fish skin gelatin film containing Moringa oleifera Lam. leaf extract to the packaging of Gouda cheese

Abstract: This study aims to develop a puffer fish skin gelatin (PSG) film that contains Moringa oleifera Lam. leaf extract (ME) as a new biodegradable film. With the increase in ME concentration, the tensile strength and elongation at break of the PSG film increased, whereas the oxygen permeability and water vapor permeability decreased. In addition, the PSG film with ME exhibited antimicrobial activity against Listeria monocytogenes and antioxidant activity. To apply the ME-containing PSG film to food packaging, Gouda… Show more

“…Also, the following decrement of TBARS and POV during storage had no association with cheese types, except in POV of WL cheese which showed a significant correlation between storage time and POV even at 60 days (Figure a and b). The reduction in POVs was also reported in an investigation by Lee, Yang, and Song (), who prepared packaging of Gouda cheese based on fish skin gelatin containing Moringa oleifera Lam . leaf extract.…”

“…This could result in the reduction of film affinity toward water, thus decreasing the water vapor transmission rate through the film. Lee et al reported that when the levels of Moringa oleifera Lam. leaf extract increased from 0% to 1%, the WVP of puffer fish skin gelatin film decreased.…”

“…The decrease in film transparency was probably because of the color of NE, which is yellowish. Lee et al reported that increased Moringa oleifera Lam. leaf extract levels could decrease the gelatin films' transparency.…”

“…A study conducted by Torondel, Opare, Brandberg, Cobb, and Cairncross () concluded the viability of dried and wet leaf powder as a hand‐washing item and indicated dimensions of inhibition of E. coli similar to a nonmedicated liquid soap because of saponin content. Recently, MO leaf extract in blended with gelatin isolated from puffer fish skin was used for production of antimicrobial, antioxidative, and biodegradable packaging materials (Lee, Yang, & Song, ). The gum exudate of MO is used for blue dye in Jamaica (Verma, Banerji, Misra, & Nigam, ).…”
