“…The anti-cancer properties of some of these polyphenols have been previously tested and confirmed. For instance, ellagic acid, quercetin, catechin, and phenolic acid prevented several kinds of cancer that affect the skin, stomach, duodenum, mouth, colon, liver, lung, and mammary glands (Yang et al, 2001;Okafor et al, 2022). Ade-Omowaye et al (2015) and independently confirmed the presence of antioxidant-related phytochemicals: phenolics and flavonoids in AYB.…”

“…In a comparative study of antioxidants produced by Bambara groundnut (BG) using methanolic extract, Salawu (2016) identified the presence of several polyphenols in the raw and cooked BG seeds after quantification using HPLC-DAD. A recent study identified catechin, epicatechins, rutin, quercetin, isoquercetin, kaempferol, luteolin, gallic acid, chlorogenic acid, caffeic acid, and ellagic acid as polyphenols found in BG (Okafor et al, 2022). Likewise, Harris et al (2018) compared the level of flavonoids in red and brown BG hulls and observed that the brown hull had the highest amount of rutin (24.46 ± 0,23 mg g -1 ) and myricetin (1.80 ± 0.77 mg g -1 ) while the phytochemicals chlorogenic acid and ellagic acids which are tannins, had their highest concentrations in red BG hulls (0.12 ± 0.19 mg g -1 ) and brown BG (0.11 ± 0.08 mg g -1 ) respectively (Harris et al, 2018).…”

“…The main fatty acids in BGN are oleic (18:1 n-9), linoleic (18:2 n-6) and palmitic (16:0) representing 23, 36 and 21%, respectively (Yao et al ., 2015). BGN has both the omega 3-(n-3) and omega 6-(n-6) fatty acids among other polyunsaturated fatty acids (PUFA) (Okafor et al ., 2022) suggesting that its consumption would promote health benefits associated with these PUFA.…”

“…The presence of antinutrients, such as condensed tannins, interferes with the digestion and bioavailability of nutrients. Condensed tannins are polyphenolic compounds present in many legumes and range from 0.01 to 2.37 mg/m in BGN (Harris et al ., 2018; Okafor et al ., 2022). They inhibit protein digestion by inhibiting the proteolytic activity and forming indigestible complexes with protein, consequentially reducing the bioavailability of amino acids.…”

“…16 The Bambara groundnut has been primarily consumed as a roasted or boiled snack to ameliorate vision problems and joint pain, reduce nausea, diarrhea, and sexually transmitted infections, treat inflammation, and inhibit the development of cancer cells. [17][18][19] The Bambara groundnut is abundant and easily accessible in Indonesia, and is, therefore, a potential food supplement to overcome PD. 20 Hence, ascertaining the safety level of Bambara groundnut consumption for overcoming PD is essential.…”
