Bioactive Minor Egg Components

Abstract: In the last 15 years, the development of functional genomics has increased the number of egg proteins identified from 50 to about 1300. These proteins are initially present in eggs to support a harmonious embryonic development. Consequently, this closed embryonic chamber contains molecules exhibiting diverse functions, including defense, nutrition and many predicted biological activities, which have been investigated using both bioinformatics and experimental investigations. In this chapter, we focus on some v… Show more

“…It represents the aqueous environment, in which sperm is exposed during its ascent from the vagina to the infundibulum. UF has been widely investigated over the past few years in relation to egg formation (Gautron, Guyot, Brionne, & Réhault‐Godbert, 2019). It is a selective transudate of serum, which also contains locally produced factors, mainly related to the metabolic activity of uterine epithelial cells.…”

“…It contains several key proteins involved in the eggshell mineralization process that occurs from 5 hr after ovulation (Marie et al, 2015; Sun, Xu, & Yang, 2013). It is also composed of bactericidal factors, providing an aseptic package for embryo development (Gautron et al, 2007; Gautron et al, 2019; Silphaduang, Hincke, Nys, & Mine, 2006; Wellman‐Labadie, Lakshminarayanan, & Hincke, 2008).…”

“…However, in other groundnesting species, such as ostrich, chicken, turkey, etc., the eggshell ultrastructure is columnar. The ultrastructure, polymorph and nucleation/growth of calcium carbonate crystals are controlled by a specific macromolecular toolkit, the organic matrix (OM) (Chien et al, 2008;Hernandez-Hernandez et al, 2008a,b;Zhao et al, 2013;Gautron et al, 2019Gautron et al, , 2021. The bird eggshell OM represents 3.5% of the total shell weight including shell membranes.…”
