Calcium and phosphorus levels as indices of textured milk proteins being substituted for meat proteins

Abstract

Textured milk proteins were tested in a meat model system with an exchange level of 34-87% of the meat proteins. The correlation between the substitution index and the calcium and phosphorus content was statistically significant.

Analysis of Fe content in daily food rations in principal socio-economic groups of population on the basis of questionnaire and analytical studies

“…Analysis of literature data related to Fe content in daily food rations has pointed to a positive role of group nourishment. As demonstrated by analytical studies, DRF of youth fed in boarding houses contained 65% more Fe [43] and DRF of university students fed in canteens as much as 134% more Fe [44] than DRF of similar population groups fed individually in Wielkopolska. The observations have also been confirmed by analytical results on retired workers fed in social welfare homes [45] in which DRF provided up to 49% more Fe than DRF of individually fed retired workers in Wielkopolska.…”
