Can Climate Change Awareness Predict Pro-Environmental Practices in Restaurants? Comparing High and Low Dining Expenditure

Abstract: The purpose of this study is to develop a better understanding of what makes consumers reduce waste in order to address climate change, particularly when dining out. To accomplish this goal, this research constructs an extended theory of planned behavior model, using four main constructs of attitude, subjective norm, perceived behavioral control, and behavioral intention and incorporating climate change awareness and mitigation pursuing actions, anticipated pride and guilt, and high and low levels of dining ex… Show more

“…As an extension of the theory of reasoned action, TPB suggests the constructs of attitudes, subjective norms, and perceived behavioral control are the primary determinants of person's intended behaviors (Ajzen, 1991). As suggested by Alexandris and Stodolska (2004), Kim and Hall (2019a), and Park et al (2017), the TPB can be improved by adding additional variables to the model. Hence, multiple scholars have examined extended TPB models (ETPB).…”

“…An example of a perceived behavioral control statement is: "Whether I participate in crowdfunding for sustainability or not is completely up to me." Behavioral intentions related to sustainability crowdfunding were assessed with four questions adapted from previous research (Kim & Hall, 2019a, 2019bSong et al, 2011). An example of a behavioral intention statement is: "I'm planning to participate in crowdfunding for sustainability."…”

“…It should be noted that few researchers have performed empirical research into the factors that influence food waste intention and behavior in workplace cafeterias [17,18]. The majority of previous research on consumer food waste is concentrated on household waste [19][20][21], and despite a few empirical studies [17,18,[22][23][24], the relationship of underlying factors affecting consumer food waste in a nonhousehold context has received inadequate attention, especially in East Asia. Additionally, most of the previous pertinent research is limited to restaurants [25].…”

“…21 According to the simulated example presented in the study, rainfall exhibited a decreasing trend, while temperature exhibited an increasing trend. Other research has considered consumer waste connected to climate change, 22 particularly consumer waste generated when people dine out in restaurants. An online survey was conducted in which several hundred young adults were asked questions, each of whom had dined out in a restaurant during the previous month.…”
