Chemical composition analysis and antioxidant activity of black rice pigment

Abstract: The purpose of this research was conducted to determine anthocyanin constituent from the grains of Purple black rice No. 6. Moreover, the in vitro antioxidant activity of black rice pigment (BRP) was evaluated. The crude extract of black rice was isolated and purified by silica gel thin layer chromatography. Anthocyanins were elucidated using ultraviolet visible spectroscopy, infrared spectroscopy, nuclear magnetic resonance spectroscopy, and high-performance liquid chromatography. Meanwhile, salicylic acid Fe… Show more

“…Antioxidant concentrations in extracts are shown in Tables 1 and 2. The ORAC assay measures the scavenging capacity of antioxidants against the peroxyl radical, whereas the DPPH assay is implemented to measure free-radical scavenging capacity (12). It was considered appropriate to combine DPPH based on the electron donation reaction and ORAC, which is an evaluation method based on the hydrogen atom donation reaction, to assess the antioxidant capacity of blueberries in the present study.…”

“…The DPPH assay is a standard and easy colorimetric method for estimating antioxidant properties by assessing the free-radical scavenging capacities of antioxidants. The scavenging abilities of the samples for DPPH were assessed as previously described with some modifications (12,13). Extracted samples were initially mixed with a 1% TFA solution and adjusted to a total volume of 1 mL at various concentrations.…”

“…In the present work, proximate composition is determined by a series of methods given by AOAC‐1990 and expressed as percentage (g/100 g) of brown rice. Determination of the physicochemical composition values of dehulled and pulverized brown rice samples, including moisture, ash, crude (protein, fiber, and lipid) and total carbohydrates of each phase (initial, after 3 months, and after 6 months) and each temperature was performed by using the Standard methods of analysis, such as ultraviolet–visible (UV/Vis) spectrophotometer, inductively coupled plasma optical emission spectrophotometer (ICP‐OES), gas chromatography mass spectrometry (GC–MS), and high performance liquid chromatography (HPLC) (Katsa et al, 2021 ; Tai et al, 2021 ).…”

“…The DPPH• scavenging activity of BAP and PBAP was evaluated according to the method of Tai et al (2020) with few modifications. In brief, the sample solution (2.0 ml) of different concentrations (0.05, 0.1, 0.2, 0.3, 0.4, and 0.5 mg/ml) and the preconfigured DPPH-ethanol solution (0.2 mM and 4.0 ml) were quickly mixed.…”
