Chlorophylls as Natural Bioactive Compounds Existing in Food By-Products: A Critical Review

Abstract: Chlorophylls are a group of naturally occurring pigments that are responsible for the green color in plants. This pigment group could have numerous health benefits due to its high antioxidant activity, including anti-inflammatory, anti-cancer, and anti-obesity properties. Many food by-products contain a high level of chlorophyll content. These by-products are discarded and considered environmental pollutants if not used as a source of bioactive compounds. The recovery of chlorophylls from food by-products is a… Show more

“…The betel leaf's rich concentration of chlorophyll a and chlorophyll b accounts for its dark-green hue. While chlorophyll b is green-yellow, chlorophyll a is blue-green [30] . Table 1 shows that the highest total chlorophyll value of 66.25 mg/ml was observed at 20 °C, 20 min, and a solid to solvent ratio of 10, whereas the lowest value of chlorophyll content (30.09) was found at 20 min, 40 °C, and 30 solids: solvent ratio.…”

“…Chlorophyll has a wide range of nutritional and health-promoting benefits, as a result of it being rich in vitamins and minerals, as well as exhibiting antioxidant and anti-inflammatory properties. 19 The chlorophyll content of the leaves of P. afra remained relatively constant in both treatments, across all three harvests (p>0.05). This suggests that the plant may offer health-promoting benefits despite being exposed to elevated CO 2 concentrations.…”

“…This sort of molecule possesses antioxidant activity due to its ability to scavenge free radicals, donate hydrogen atoms or electrons, or bind metal cations. Another reason for increase in antioxidant property of broccoli after impregnation can also be attributed to the elevated levels of chlorophyll, which acts as an antioxidant 47 . Chlorophylls and their derivatives have shown important health-promoting functions, showing anti-mutagenic, anti-cancer, and anti-inflammatory activities.…”
