Abstract:In order to study the race effect on the physico-chemical characteristics and protein profile, two sheep or ovine breeds Hamra and Ouled Djellal were raised in the same condition sat the ITELV (National institute of breeding) (Ain Hajar-Saida, Algeria). The analyses were focused on the pH, density, freezing, fat, total protein, dry defatted extract and total dry extract.
