Selenium (Se) is a trace mineral found in plants with a distinct sulfuric odor that is cardioprotective and reported to have low toxicity. West Java, Indonesia, has a variety of plants with a distinct odor that are consumed raw, such as jengkol (Archidendron pauciflorum). This study is conducted to determine the Se content of jengkol using the fluorometric method, where the jengkol extract is separated, and the Se content is detected using high-pressure liquid chromatography (HPLC), combined with fluorometry. Two fractions with the highest Se concentration (A and B) are found and characterized using liquid chromatography mass spectrometry to predict the organic Se content by comparing the results with those in the external literature. The Se content of fraction (A) is found to be selenomethionine (m/z 198), gamma glutamyl-methyl-selenocysteine-(GluMetSeCys; m/z 313), and the Se-sulfur (S) conjugate of cysteine-selenoglutathione (m/z 475). Furthermore, these compounds are docked on receptors involved in cardioprotection. The receptors are peroxisome proliferator-activated receptor-γ (PPAR-γ), nuclear factor kappa-B (NF-κB), and phosphoinositide 3-kinase (PI3K/AKT). The interaction of receptor and ligan that has the lowest binding energy of the docking simulation is measured with molecular dynamic simulation. MD is performed to observe bond stability and conformation based on root mean square deviation, root mean square fluctuation, radius gyration, and MM-PBSA parameters. The results of the MD simulation show that the stability of the complex organic Se compounds tested with the receptors is lower than that of the native ligand, while the binding energy is lower than that of the native ligand based on the MM-PSBA parameter. This indicates that the predicted organic Se in jengkol, i.e., gamma-GluMetSeCys to PPAR-γ, gamma-GluMetSeCys AKT/PI3K, and Se-S conjugate of cysteine-selenoglutathione to NF-κB, has the best interaction results and provides a cardioprotection effect, compared to the molecular interaction of the test ligands with the receptors.

The market is the main place for buying and selling alternative food ingredients and is rich in local wisdom. This study aims to explain the diversity of food plants and alternative foods that are traded in the Kranggan Mas traditional market, Bekasi and their potential as healthy food ingredients. The research was conducted with an ethnobotanical approach with surveys, interviews and observations. Respondents in the study were all traders who traded alternative food ingredients. Qualitative analysis includes grouping plants based on benefits, families, and parts used. There were 143 species belonging 105 genera and 46 families of food plants that were traded at the Kranggan Mas traditional market. Most of the plants are used as vegetables (51 species), followed by fruit sources (45 species) and followed by cooking spices (38 species) and alternative food (12 species). A total 128 species have been cultivated and 10 species are wild. The availability of diversity of food plants in traditional markets has an impact on the preservation of traditional foods of the surrounding community, such as sayur asem (Betawi ethnicity), pecel (Javanese ethnicity), and lalab (Sundanese ethnicity). Supply and development of food, especially wild and semi-cultivated plants such as Dioscorea spp. and Arthocarpus sp. need to be studied further so that preservation and healthy food can be improved.

Santri is an unique person in a various economic activities. In the mix of local wisdom that is thick with spiritual values and wrapped in the dynamics of the use of digital technology, students are seen as having a real influence in realizing community empowerment in the economic field. This article aims to describe the role of santri through local wisdom and the use of digital technology in creating community empowerment. To get accurate and up-to-date information, observations and collect information has done by interviewed to santri about their strategies in dealing with economic problems in the regency as well as tips on utilizing digital technology. Furthermore, the information is checked with primary sources in the form of community members to measure the effectiveness of the role of the santri. The analysis and discussion of the data was carried out qualitatively with the phenomenological approach of the Madurese community. The research findings in this article show that there is a collaboration of the attitude and mentality of students in the midst of society with personal capital of independence, honesty, and work ethic. In terms of using digital technology, they are also able to adapt quickly and precisely. Thus, this research is expected to be able to provide a complete and accurate description of the existence and role of santri in creating community empowerment in the economic field, so that regulatory and policymakers can determine priorities in regional and national development.
