Abstract: Pectin is an acidic heteropolysaccharide, a natural high molecular weight compound primarily found in higher plants. It consists of four major structural domains: homogalacturonan (HG), rhamnogalacturonan II (RG-II), rhamnogalacturonan I (RG-I), and xylogalacturonan (XGA).
