�Desta �gua n�o beberei e deste p�o n�o comerei�: negocia��es do comer e representa��es sociais dos riscos alimentares

Abstract

As sociedades lidam de formas diversas com os riscos alimentares, construindo coletivamente diferentes percep��es sobre os mesmos. A partir do conceito de Food Safety, este di�rias artigo discute representa��es sociais do risco alimentar constru�das e negociadas nas rotinas. As an�lises adv�m de dados coletados em uma pesquisa densa de Grupo Focal que contou com a participa��o de 86 informantes. Como resultado da pesquisa, foram encontradas quatro representa��es sociais que revelam as l�gicas presentes na mem�ria coletiva das fam�lias, alicer�ando emo��es e impulsionando as a��es relativas ao comer: cidadania, desconfian�a, medo e impureza. Estas quatro representa��es sociais espelham valores �ticos, sociais e ambientais que modelam as preocupa��es e pr�ticas alimentares.

On how people deal with industrialized and non-industrialized food: A theoretical analysis
