The experiment was conducted at Horticultural Research Station, Mondouri, BCKV during 2015-2017 to find out the effect of mulching and supplementary irrigation on physical and chemical properties i.e fruit weight, length, diameter, pulp percentage, TSS, acidity, vitamin-C, anthocyanin etc. of Bael (Aegle marmelos Correa.) The experiment was put on factorial RBD consist of nine treatments viz. M0I0 - No mulch + no irrigation (Control). M0I1 - No mulch + basin irrigation with 15 litres/plant at 10 days interval, M0I2 - No mulch + basin irrigation with 15 litres/plant at 20 days interval, M1I0 - Black polythene mulching + no irrigation M1I1 - Black polythene mulching + basin irrigation with 15 litres/plant at 10 days interval, M1I2 - Black polythene mulching + basin irrigation with 15 litres/plant at 20 days interval. M2I0 - Dry leaves mulching + no irrigation, M2I1 - Dry leaves mulching + basin irrigation with 15 litres/plant at 10 days interval, M2I2 - Dry leaves mulching + basin irrigation with 15 litres/plant at 20 days interval. Which are interaction of two factor i.e. mulching and irrigation and each treatment has three replications. Mulching with black polythene followed by basin irrigation with 15 litres/plant at 10 days interval was most effective in improving fruit weight (1089.17g), size (length 12.89cm and diameter 39.18cm) and pulp content (56.16%) followed by dry leaves mulching + basin irrigation 15 litres/plant at 10 days interval. The fruit quality like vitamin C and anthocyanin content were also improved by mulching with black polythene followed by basin irrigation 15 litres/plant at 10 days interval but TSS, acidity whereas total sugar content in the fruits were not affected due to mulching and supplementary irrigation

Aim: To standardize appropriate blends of jamun and bael for developing fruit cheese and its nutritional and microbial analysis during 90 days of storage. Methodology: Fruit cheese was prepared by blending jamun and bael fruit in different ratios of pulp in each treatment. The blended product was monitored regularly for 90 days of storage period at ambient conditions at an interval of 30 days. The data obtained was analysed statistically using Factorial Completely Randomized Design (CRD) at 5 % level of significance. Results: With the advancement of storage period moisture content, crude protein, ash and crude fat decreased from 16.94 to 15.90 %, 2.15 to1.72%, 0.63 to 0.52 % and 5.98 to 5.54 %, respectively. Available carbohydrates and browning showed increasing trend from 74.30 to 76.35 % and 0.483 to 0.610 (OD), respectively, during storage with highest mean available carbohydrate of 76.25 % in treatment containing 100 % jamun. Interpretation: Jamun and bael fruits can be blended to formulate fruit cheese with improved nutritional quality viz., crude protein, ash and minerals. The microbiological characteristics of prepared fruit cheese were within safe limits. The blended fruit cheese can be stored at room temperature for more than 90 days without much loss in nutritional and eating quality.

India is the largest producer of medicinal plants and is rightly referred to as "the World's Botanical Garden." Medicinal plants play a key role in the health and vitality of humans and animals alike. Researchers have been attempting to recognize and validate plant-derived substances for the treatment of various diseases that promote compounds for health and nutrition for the past few years. Bael is a common plant that originated in India (Aegle marmelos). According to a study of the literature, entire parts of the plant, such as roots, barks, leaves, fruits, seeds, and flowers, are used to treat various diseases. Bangladesh, Indonesia, China, and other Asian countries, for example, it is a spiritual, religious, and medicinal plant that can be found all over the world. It has a number of therapeutic applications. Nowadays, various products from various parts of the plant are prepared. The biological profile, botanical description, physicochemical parameters, conventional uses, therapeutic applications and creative aspects are included in this study. The purpose of the present analysis is to compile the general chemical profile, both medicinal and economic value, value-added items such as juice, jam and toffee, and other uses of Aegle marmelos.
