Effect of a Water Rinse and a Detergent Wash on Milkfat and Milk Protein Soils

Abstract: The effect of rinsing and washing with chlorinated alkaline detergents on the protein and fat present in milk soils was studied as a function of temperature, time and length of milk contact before cleaning. Milk containing either I131-labelled protein or I131-labelled fat was recirculated through a test chamber for varying times, after which the chamber was rinsed with water then washed with a detergent solution. “…A temperatura adequada da água deve estar na faixa de 38ºC a 46ºC, pois temperaturas superiores podem provocar desnaturação de proteínas, que facilita a aderência desses compostos à superfície dos equipamentos; temperaturas mais baixas podem ocasionar a solidificação de gorduras, que prejudica a eficiência da limpeza (Leitão, 1975).
