Effect of canning method on the food security, physical‐chemical characterization and sensorial analysis of banana tree palm heart

Abstract: The banana is the most produced fruit in the world, it is estimated that in 2018, more than 115.7 million tons were produced worldwide (Food and Agriculture Organization of the United Nations [FAO], 2020), Brazil occupies a prominent position, producing approximately 6.75 million tons, in an estimated area of 449,284 hectares. It is the fourth largest fruit producer of the world, behind India, China and Indonesia (FAO, 2020).
