Effect of different soaking and germination methods on bioactive compounds of germinated brown rice

Abstract: Summary Germination of brown rice can be completed by full soaking and partial soaking methods. This study aimed to analyse the influence of germination methods on the bioactive accumulations in germinated brown rice (GBR). Germination was conducted in four treatments: (i) membrane reactor with full (RFS) and (ii) partial soaking method soaking (RAG), (iii) manual soaking for complete germination (MFS) and (iv) partial manual soaking in combination with atmospheric germination (MAG). The results showed that so… Show more

“…Mass concentrations of γ-oryzanol extracted with V (2-propanol)=4 ( γ 1 ) and 8 mL ( γ 2 ) were determined using a linear regression (R 2 =0.999) constructed from standard γ-oryzanol solutions ( γ =25-125 mg/L) and their corresponding absorbance values. Finally, γ-oryzanol mass fraction in mg per gram sample was calculated according to the following equation ( 1 , 14 ):…”

“…Whereas insufficient soaking time does not increase the content of bioactive compounds of seeds. 15,16 Nakamura et al 17 increased the bio-functionalities of premium rice (Koshihikari), black rice (Okunomurasaki) and giant embryo rice (Koiazusa) soaked in red onion solution. These rice samples (2.5 g) were soaked in a 10 mL 2% red onion solution at 35 C for 16 h.…”
