In terms of product dryness, MW irradiation can selectively heat the water molecules in the matter and hence accelerate their escape. This heating mode can significantly reduce the reaction time and therefore overcome the problems ( e.g ., oxidation or loss of some volatile components) caused by long-term roasting occurring in traditional routes. , The selective heating behavior of water molecules has exhibited significant advantages in organic extraction, because the induced evaporation of water inside the cells can cause the rupture of biological tissue and cells and the accelerated discharge of bioactive compounds. , The rapid heating of the water phase by MWs can also be used to disturb the water–oil interface, which is conducive to the demulsification of a water-in-oil emulsion.
