Resumo -Este trabalho objetivou avaliar o efeito da adição de levedura seca (Saccharomyces cerevisiae) à dieta de poedeiras na qualidade dos ovos. Foram utilizadas 120 poedeiras comerciais com 33 semanas de idade, distribuídas em um delineamento estatístico de blocos ao acaso, com cinco tratamentos (0, 7, 14, 21 e 28% de levedura), quatro repetições e seis aves por unidade experimental. Rações isoprotéicas (18% de proteína bruta), isoenergéticas (2.800 kcal de energia metabolizável/kg), isocálcicas (3,8% Ca) e isofosfóricas (0,38% P disponível) foram formuladas à base de milho e farelo de soja. Os níveis de levedura seca não alteraram o peso do ovo (64,35±0,85 g), a altura do albúmen (7,95±0,22 mm), a unidade Haugh (87,42±1,31), os sólidos totais da gema (50,86±0,20%), o extrato etéreo da gema (30,74±0,26%), a proteína da gema (16,92±0,16%), a gravidade específica do ovo (1,0912±0,001 g/mL), o peso da casca (6,67±0,08 g) e a espessura da casca (0,4671±0,003 mm). Foi observado efeito quadrático na variável cor da gema no terceiro ciclo de postura. A inclusão de até 28% de levedura seca nas rações intensificou a cor da gema e foi considerada uma prática viável pela análise econômica.Termos para indexação: Saccharomyces cerevisiae, alimento, nutrição animal, ave. Quality of the eggs of commercial layers fed with sugarcane dry yeastAbstract -This work aimed at evaluating the effect of the addition of dry yeast (Saccharomyces cerevisiae) to the laying diet on the quality of the eggs. One hundred and twenty chickens with 33 weeks of age were used in a randomized block design, with five treatments (0, 7, 14, 21 and 28% of dried yeast), four replicates and six birds per pen. Diets similar in protein (18% of crude protein), energy (2,800 kcal of metabolizable energy/kg), calcium (3.8%) and in phosphorus (0.38% of available phosphorus) were formulated based on corn and soybean meal. The levels of dry yeast did not affect egg weight (64.35±0.85 g), albumen height (7.95±0.22 mm), Haugh unit (87.42±1.31), total yolk solids (50.86±0.20%), ether extract of yolk (30.74±0.26%), yolk protein (16.92±0.16%), egg specific gravity (1.0912±0.001 g/mL), shell weight (6.67±0.08 g) and shell thickness (0.4671±0.003 mm). Quadratic effect was observed for the variable yolk color in the third laying cycle. The inclusion of dry yeast up to 28% provided increase on yolk color and proved to be economicaly viable.

Values of egg weight, egg length, egg width, eggshape index, eggshell weight, eggshell ratio, eggshell thickness, eggshell surface area, unit surface area and egg volume were determined as 40.14 g, 49.47 mm, 37.89 mm, 0.76%, 6.48 g, 16%, 0.54 mm, 65.69 cm 2 , 0.11 g/cm 2 and 38.21 cm 3 , respectively. In addition, values of yolk weight, yolk height, yolk width, yolk index, yolk ratio, albumen height, albumen width, albumen length, albumen weight, albumen index, yolk/albumen ratio and haugh unit were found as 13.58 g, 14.99 mm, 40.64 mm, 37%, 33%, 4.77 mm, 62.97 mm, 80.07 mm, 21.62 g, 6.7%, 68% and 74.97%, respectively. According to the results determined in this study, all most all external quality traits of the egg were changed at the significant levels depending on the change occurred in the egg weight. The results indicated that egg weight influences external egg quality traits of quinea fowl. The positive correlations obtained among the egg quality traits indicated that they can be improved phenotypically through selection. Bu amaçla toplam 100 adet Beç tavuğu yumurtası kullanılmıştır. Araştırma Akdeniz Üniversitesi Ziraat Fakültesi Zootekni Bölümü Hayvancılık Birimi'inde yürütülmüştür. Yumurta ağırlığı, yumurta uzunluğu, yumurta eni, şekil indeksi, kabuk ağırlığı, kabuk oranı, kabuk kalınlığı, kabuk yüzey alanı, birim yüzey alanı ve yumurta hacmi sırasıyla 40.14 g, 49.47 mm, 37.89 mm, %0.76, 6.48 g, %16, 0.54 mm, 65.69 cm 2 , 0.11 g/cm 2 ve 38.21 cm 3 olarak bulunmuştur. Ayrıca, sarı ağırlığı, sarı yüksekliği, sarı genişliği, sarı indeksi, sarı oranı, ak yüksekliği, ak genişliği, ak uzunluğu, ak ağırlığı, ak indeksi, sarı/ak oranı ve haugh birimi de sırasıyla 13.58 g, 14.99 mm, 40.64 mm, %37, %33, 4.77 mm, 62.97 mm, 80.07 mm, 21.62 g, %6.7, %68 ve %74.97 olarak hesaplanmıştır. Yumurta ağırlığındaki değişmeye bağlı olarak yumurtanın dış kalite özellikleri önemli derecede değişmiş ve yumurta ağırlığı dış kalite özelliklerini etkilemiştir. Yumurta kalite özellikleri arasında ortaya çıkan önemli korelasyonlar bu özelliklerin fenotipik olarak seleksiyonla iyileştirilebileceğini göstermiştir.

The present study was conducted to investigate the effects of storage duration and egg shell color on external and internal egg quality traits. Eggs were obtained from 29-week--old ATAK-S layer hybrids reared in a traditional cage system. Storage durations were set as 0, 7, 14, 21 and 28 days. Shell color was classified as dark (59.00-67.99); moderate (68.00-70.99) and light (71.00-79.99) using the ∆E values of the eggs. The storage duration significantly affected the egg weight (P≤0.01), specific gravity (P≤0.01), breaking strength (P≤0.01), shell thickness (P≤0.01), shell weight (P≤0.01), surface area (P≤0.01), albumen index (P≤0.01), yolk index (P≤0.01), Haugh unit (P≤0.01), yolk color (P≤0.05) and albumen pH (P≤0.01). The egg shell color significantly affected the specific gravity (P≤0.01), breaking strength (P≤0.01), shell thickness (P≤0.01), shell weight (P≤0.01), albumen pH (P≤0.05) and albumen blood-meat spots (P≤0.05). The current findings revealed that the eggs should be transported to consumers as soon as possible, and further studies should be performed to darken egg shell colors. It was concluded that newly laid dark colored eggs had the best quality.
