Abstract:In order to ensure compliance of raw bean paste products with the Japanese Food Sanitation Law, we examined the performance characteristics of an analytic procedure based on steam distillation followed by carbonate-pyrazolone assay to determine cyanogenic compounds in raw bean paste.
