Abstract:This study explored Pickering emulsions stabilized by chitosan (CS), chitosan-Laminaria japonica polyphenols (CP), and chitosan-Ascophyllum nodosum polyphenols (CB) as β-carotene delivery systems. Emulsion stability was analyzed using multiple light scattering and cryogenic-scanning electron microscopy (cryo-SEM).
