Pranjali Singh,
C. Sree

Abstract: As there is a rise in adulteration of honey which leads to the formation of a carcinogenic and cytotoxic compound, 5-hydroxymethyl-2-furfural (HMF) in honey, it has become very essential to test honey for the presence of this compound. Honey is a natural sweet product that is produced by honey bees (Apis mellifera). This carcinogenic compound, 5-hydroxymethyl-2-furfural is developed on dehydration of reducing sugars present in honey in acidic conditions.
