“…Quercetin-glucuronide has been reported in raspberries and strawberries (Maatta-Riihinen et al, 2004;Ryan & Coffin, 1971), although Maatta-Riihinen et al (2004), only detected kaempferol-glucuronide in strawberries. The pharmacokinetics of flavonols in humans is reported to differ significantly between food sources depending on the type of glycosides that they contain (Manach & Donovan, 2004).…”

“…On the other hand, Rommel and Wrolstad (1993b) found that total content of flavonols in 55 samples of experimental and commercial red raspberry juices ranges from 15.7 to 286 µg/kg. Several flavonol glycosides have been identified by Ryan and Coffin (1971), Henning (1981) and Mullen et al (2002a) in fresh raspberry fruits: quercetin 3-glucuronide, quercetin 3-glucoside, quercetin 3-xylosylglucuronide, quercetin 3-galactoside, methylquercetin-pentoside (probably xyloside) and kaempferol 3-glucoside. Later, Rommel and Wrolstad (1993a) detected more quercetin and kaempferol derivatives, but did not attempt to characterize them.…”

“…The non-anthocyanin flavonoids present in red raspberries are mainly flavonols (3hydroxyflavones; Figure 1), catechins, and trace amounts of flavones (Henning, 1981;Herrmann, 1974Herrmann, ,1976Mosel and Herrmann, 1974; Ryan and Coffin, 1971). Flavonols are apparently present as 3-glycosides (i.e., glucuronides, glucosides, galactosides, xylosylglucuronides, xylosylglucosides) of the flavonols quercetin and kaempferol (Henning, 1981;Herrmann, 1974Herrmann, ,1976; Ryan and Coffin, 1971). Only fresh raspberries and a few European cultivars have been investigated in these studies, and there is little or no * Author to whom correspondence should be addressed [phone (503) 737-3591; fax (503) .…”
